Being of Middle Eastern ancestry, most of the meals Mom made had that influence. Squash was mostly made stuffed with lamb and rice, dried mint, and boiled with crushed tomatoes. It's delicious, but when I tried fried squash some time in my 30's, I loved it! I use corn meal with not liquid, just as you did, and now that I saw this, I need to make it tomorrow. Great video, as usual. Thanks!

My dad loved fried squash more than anything and we always had a garden so we had it often. Mom did the medallions and the old man would eat them about as fast as she'd get them out of the pan. I love them too and make my own often. Mom just used cornmeal to bread hers but I like using just plain ole flour with some pepper and garlic powder. I salt them to taste at the table.

I grew up with the individual pieces fried one at a time. When my chidren were old enough to eat squash, I would have our two kids and my husband standing over me eating squash as fast as it came out of the pan. The squash rarely made it to the table with the rest of the meal. I'm growing squash and zucchini this year and I can hardly wait to fry up some. I'm widowed and alone now with my kids living an hour away, so it won't be nearly as much fun since there will be no one to stand over me while I'm frying. Goodness, I'm going to have fried squash, sliced tomatoes, fresh green beans, corn on the cob and hot cornbread. Wish you and I could sit down and enjoy it together. Diane in NC

I noticed you had yellow patty pan squash in a bowl. Pop-pop only grew white patty pan squash, called simlins by the old timers, for frying. Mom-mom would closely cut around the stems and the navel shaped piece on the bottom before cutting thin, lengthwise slices that made rough oval-shaped pieces. She dredged them in plain flour, no seasoning, shook off the excess flour and fried them in an iron skillet until nicely browned, turning once, until she had a mound of slices three to four inches deep on a meat platter. The delicate, sweet taste of the squash paired with the toasted flour was, and still is today, irresistible to me. Pop-pop always salt and peppered his, but Mom-mom and I ate them with no seasoning. To me, salt covered over too much of the flavor described above. He sometimes grew yellow straight-necked squash, but Mom-mom always stewed these in one inch chunks until just cooked through.

That reminded me of when a friend and I were living in the woods making our living cutting firewood. A friend of ours from the city came to visit, he was a gourmet chef by trade. The first breakfast he offered to cook and started cutting little slices of potato and daintily placing them in the pan. We told him we were hungry working men and weren't worried about presentation, we just wanted a big pile of fried taters. So we showed him how to cut up a bunch of potatoes and tossed them all in a hot cast iron pan at once. After he tasted the results he agreed that was a better way to do it.

I’ve never coated and fried yellow summer squash. I cut mine in medallions and sauté them in butter adding a touch of sugar, dried onion flakes, 1/2tsp. of beef bullion and salt and pepper to taste. If I want to make it into a casserole, I add a beaten egg slowly, some sour cream. Then add a mixture of bread crumbs and grated cheddar cheese and bake for 25 minutes. I call this Country Club Squash.

Momma would slice the squash in medallions and slice onions and roll them all in corn meal. Put it all in the skillet together to fry. She would turn the concoction with a big spatula.. After both sides of the whole batch had lightly browned, she would serve the delecious mess. It was so good. My sister and I make it often in the summer..

my Granddad had a truck patch and always grew squash and zukes. I loved it and could eat myself sick on it, but never ever lost my love for it. Grandma would slice it about 1/4" thick and fry it like you. She'd lightly salt it after it was fried. It was so good. We often had zukes that were a little bigger than optimal and when Grandma cooked those bigger slices, it was like a steak dinner!

Try a deep fryer. It's like green eggs and ham---you might like it. It's thermostatically controlled and there's so much heat in the oil that temperature is fairly steady... More importantly, if you're frying chicken, you get 7 minutes to hustle around in the kitchen each time your drop the basket.

If I make the main dish in the oven I do the squash on a cookie sheet there. If the main dish is done on the stove I fry it like you did ... and sometimes don't even flour it. However I do it, squash is easy to prepare, picks up an improved flavor (my opinion) and quickly gives you a great side dish. I like the fried green tomatoes and fried eggplant ideas too.

My wife cuts them like your Pap. She cuts them and puts them in a bowl of water. Then coats them in Quaker yellow cornmeal and fries them in butter Crisco. The house smells like butter popcorn while she is cooking them. Love it! Awesome video! She also cooks them like fried taters and onions in butter Crisco and sprinkles cornmeal in there for some crunch. She just started cooking zucchini the same way. It is equally as tasty.

My grandmother used to make green squash (zucchini) fritters with a savory batter and diced squash. My dad made them as well. His uncle taught me to put maple syrup on them, and that's how I make them for our family. I learned them as the Italian name (pronounced 'pee-too-eelies'...no clue about spelling or dialect). This video reminds me of that recipe and the connections we have with food and family. I really like this channel and thanks for sharing!
