    @@johnparnell9488 I'm more concerned with it not falling apart after frying and getting dry. Hit it with heat so you get that nice Maillard reaction, crust, and crispiness. Just gotta be gentle getting it into the pan. I think having it in the freezer might throw off the cooking time and evenness.

    As someone who loves Banh Mi ... this is nearly perfect. The only thing I think can be improved on is the "sandwich" experience e.g. a bread topper, if you get my point. But man, holy heck, I absolutely love this recipe. Added to my personal Trello for recipes already. :) Thanks Chef John!

    There's a restaurant 5 minutes from my house called Bahn Mi Bites after its specialty dish. The Bites look very much like this but they use the Vietnamese read and white hams and pork floss.

    As a kid we ate many a plain bologna sandwich on Wonder Bread, with OM bologna of course. My cousins fried their bologna, and when I saw it I was surprised and amazed. Now as adult, once in a great while I'll buy bologna to fry with sunny side up eggs. But what to do with that extra bologna? Now I know ! Thanks, CJ!.
