Fresh Strawberry Pie!! (without Jello)

Learn how to make the best fresh strawberry pie!! Perfect for the peak of strawberry season in spring and early summer when strawberries are their most flavorful. This recipe is so easy, super delicious and sure to be a hit with everyone who tries it!
What you'll need:
1 single pie crust (see how I make mine here: • Perfect Homemade Pie C... )
2 lbs fresh ripe strawberries (900g)
3/4 cup sugar (150g)
3/4 cup water (180ml)
1 tsp lemon juice
3 Tbsp cornstarch (or arrowroot, tapioca, potato starch, etc)
3 Tbsp water
whipped cream (see how I make stabilized whipped cream here: • Homemade Whipped Cream )
Preheat your oven to 450*F (230*C). Prepare your pie crust in a 9" pie tin or pie plate. Dock the crust with a fork and bake for 10-12 minutes or until just barely light brown. Remove from oven and allow to cool.
Wash strawberries well. Drain and core them. Slice into quarters (or more pieces for larger berries). Put about 3/4lb into a medium saucepan on the stove. Add in sugar, 3/4 cup water and lemon juice. Bring to a boil and boil for 3 minutes, stirring constantly and breaking up the berries the entire time. When 3 minutes is up, remove from heat and strain into a measuring cup. You should have 12 ounces of juice (360ml or 1.5 cups). If not, add water to make 12 ounces. Pour back into your saucepan and bring to a boil. Add the cornstarch slurry and bring back to a boil. Cook for 15-30 seconds at most. Pour onto remaining strawberry pieces and toss to coat. Pour into cooled pie shell and refrigerate for 4-6 hours, or up to 24 hours. Top with whipped cream and serve. Enjoy!!

Love this pie! When I make it I add some vanilla pudding to the bottom of the pie before adding the strawberries. I also add a little fresh mint to the strawberries. I find it just adds a little something extra.

For all you people that don't like pie crust: Shortcrust (or how we Germans call it Mürbeteig) goes quite well with Strawberry cake: Just add flour, butter and sugar in a weight ratio of 3:2:1 (best results with 300g flour, 200g butter and 100g sugar) and you're done. Some recipes call for an egg too, but I don't really think it's necessary. A little bit of vanilla sugar is a nice touch though.

Just found your videos. I made the strawberry jam, it turned out wonderful. I only used 3/4 of a cup of Sugar cause my husband can’t have a lot of sugar. He Loved it. I like that I was able just to make a little bit because, it’s only my husband and I. Thank you so much for sharing.

I have a couple but not many. There's only 2 of us in my house but I cook for 4 so I only have to cook every other night. But I'll see about doing more food-for-two.

using Sure gel is ok too and these are a big hit when done in individual pies with a whole strawberry on top. My mum and sister would eating it all up.😍😋

love that this is done without gelatin. quick question, do you think one of those broken glass jello desserts could also be made with corn starch rather than jello? i know agar agar can be used instead of jello, but i wanted to use cornstarch for the white part that is made from condensed milk. thank you!

The pie was delicious, a little sweet for my taste, but I realize it depends on the sweetness of the strawberries. Mine were a little bit tart. I had leftover thickened juice, and I think I will make just the thickened juice for pancakes in the future! It would be great mixed into sparkling water, too.
Great tip about not letting the pie sit too long or else it will get soggy. With a pie looking this good I doubt that would happen. But how long could you hold the pre-baked shell and the berries separately before putting them together? I could see that maceration juice flavoring a rum cocktail.

Hello C Crackerjack. I made the pie per instructions, and it was delicious. The one issue I had was it didn't set up and "gel" . Filling was thick, but not semi firm , in order to hold cut pieces together. Anything I may have done or not done? Going to try jello or other recipes also, but curious what may have happened.
