Awesome video, thanks for sharing with us all. I’m just dipping my toe back into BBQ here in the Uk 🇬🇧 and just recently found your channel whilst looking for build videos. I run an Oklahoma Joe but looking to build something bigger with a greater metal mass which I believe will provide me with greater temperature stability. I’d love to know how much your meal you showed us on the tray in this video cost please. Nice touch checking out there dampers by the way. It’s all those little nuggets of information that really help people. Thanks again, enjoy your day Tris 🙏

Thanks for the support brother!! I started on an Oklahoma Joe, and mastered that unit over many years. It’ll make your appreciate the upgrade so much more!!! The meal was $94. Looking back I wish I would have just got a little bit of everything haha but in the moment I was laser focused on brisket I didn’t really think to dabble in turkey or pulled pork. I’d say $150 will get you pretty far. Glad you found the ‘ol meat ‘n’ greet channel- cheers 🍻

Good video! I've always said no way I'll wait 6, 7, 8 hours in line to eat someone else's BBQ - although, I just realized, I'll kick back for 8 hours and drink a few beers to eat my OWN BBQ... so what's the difference? I'm not tending the pit? I'm paying the price? Hell, I'll buy it, so why not wait for it? I dunno... we'll see. Maybe some day I'll sit in front of that door. I know you're up in Big MO, I'm prolly heading up that way this weekend to help a friend build some pits he sells, just to learn more about the process and enjoy working on fabrication and building. Shoutout to Frank-AY, thanks for the vids, all you guys are part of the inspiration for me on this journey, as well. Big thumbs up, man!

Appreciate the support my friend- truly! Once I wrap up this build series I’ll be onto recording videos cooking on this beast finally 🙌

It will take you 12+ hours to cook your own anyways, and you're not exactly "standing in line". You just hanging out and drinking beer or coffee and people watching. Just bring a comfortable chair. Its really not a big deal at all.

Just stumbled on your chanel mate loved this video was there not long ago from Scotland to get my first taste of real deal Texan BBQ and the brisket was one of the best things I've ever eaten, definitely lives up to the hype and much like yourself ordered way too much, was eating it for breakfast next 2 days (still incredible) Tried the pulled pork too and thought much the same as your opinion on the ribs, just needed a little something else but again it was cooked to perfection. Also tried Leroy and Lewis when in town and it was incredible the beef cheek wasn't far off that brisket. I read a Texas monthly article about Lawrys seasoning salt being the worst kept secret in Texas BBQ and how it's a sneaky way of adding something to the flavour while still being able to technically say you're using just salt and pepper, Aaron Franklin has apparently said he uses it on and off but you're right there's definitely something else on that bark. Take it easy mate, subbed 👍🏻

NOTE. 1) They do regular pit room tours. You dont have to "sneak around" to get one. You just have to ask one of the ladies working there who's walking around. They wont do the first tour until about 12PM because they are loading briskets and such as you said. When they are done with all that, that they will gladly give a small group tour about every hour starting about noon.. JUST ASK and the ladies will tell you wait by the pit room door. 2) While you dont have to be "first in line" you do want to be up front to be under the cover in case it rains. About the first 30 will be under the cover. You DONT want to be in the back of the line because you wont be shielded by the building from the sun and will be totally baking in the parking lot. In the summer it can be really miserable. If you are up front you will be shielded from the sun by the building and will be eating before the sun is overhead and cooking everyone. 3) You dont have to give your exact order when in the line, you can change it all you want. They're just trying to estimate where in the line the can start to tell late arrival people they may not get food. If you order a beef rib in the line they will give you a "beef rib ticket". You kinda have to stick to that one because they're reserving them for ticket holders. Funny thing is I have been there probably 10 times. I have only seen Aaron there ONE time.

@@MeatNGreetBBQ I think the line is fun and I try to drag people there for the experience who never been there. My opinion of Franklin kinda mirrors you. The brisket is the best. Everything else is "meh" and theres other places with as good or better. I go there for the fun if it, not really the BBQ. Overall I think Truth BBQ is better and little to no line.

could the dampers be used because they are exposed to the outside so if it rained etc...??? IM REACHING

  • @MeatNGreetBBQ

For sure a note worthy thought. I’m convinced that they use the dampers simply becuse it’s almost impossible to run an efficient fire in a smoker that big for 12+ hours without adjusting them at some point. I’ve tried to run my 500 with no damper for the entire cook and while it turned out fine bbq, it was hell to keep things steady AND it ate wood like nobodies business haha. I think it’s just part of their process

@@MeatNGreetBBQ most def I'm trying to give them the benefit of the doubt with the "no damper" quote 😂 I super appreciate the comment man. Your the reason my bbq taste good now in my Oklahoma joe highland. God bless you and what you do.
