Wait, I thought the Tau were described as "bovine" *after some good ole google* Well I guess they dont really get specified but were discribed as being descended from a bovine source in something. Taken from reddit: [ It's an old meme from the Damocles Gulf Edition of the Imperial Infantryman's Uplifting Primer. I went and dug my copy of it out, there's a whole chapter making fun of the Tau and all their army units in it, with this section in particular on pages 88 & 89 talking about the Tau as a species.
