📍影片中的主人翁,汪永平先生,是《勤香土产食品》的第三代掌舵人。他每天花数小时制作千余个马蹄酥。由于长时间接近高温缸窑,大部分时间都是汗流浃背,相当辛苦。汪先生的叔公于1940年开始以手工制作马蹄酥,这门手艺一直保留到现在。感恩汪家几十年以来的坚持,我们今天才有机会亲眼目睹整个制作过程,对传统美食有深一层的了解。
📌我不是美食家,不去点评食物,而是站在另一个角度去欣赏美食,感恩厨师的付出和辛劳,也敬佩传统美食业者的坚持。

💓Maltose biscuit, commonly known as a 'horse hoof biscuit' (Beh Teh Saw), was an imperial dessert in a palace during the Tang Dynasty in China over a thousand years ago.
🧲Its flaky body contains a sweet filling, which is a sticky sweet concoction made from brown sugar, white sugar, and maltose. The biscuit is thicker on one end and resembles a 'horse hoof'.
📌This biscuit is a favourite among locals and tourists. Today, you will get to know more about the making of traditional maltose biscuits by using the primitive firing method and kiln baking technique.
