@@tony757 the fried onion can reduce the greasy of the steak. Sauce is not needed yes. The rice with plum actually go well with the steak and its juice inside though.

Great recipe, I absolutely love it! The only ways I can improve it is: 1. Slightly pound the meat flatter. That way, the onion absorbs more evenly throughout the steak 2. Grate/blend the onion for tenderizing instead of finely chopping. It'll release more onion juice which is full of the enzymes used to Tenderize the meat and give it more flavor. But I get that it was a recreation, so I'm just giving pointers for people who want to make this too

I'd also add: use the umeboshi paste as Soma did in the anime/manga, as it will give the rice a different flavor from chili/lime.

great video. I think if you had taken the steak and room temped it, or at least let it rise a bit more, the cooking process would have been easier. Shorter and more pink. If you want to ultra try hard. You could have also render fat in one pan, for a longer period, put onions in it + the soy sauce. Then use another pan, heavy bottom, to sear both sides over 1-2 minutes. Toss in oven for 6 minute per inch. Deglaze 2nd pan with onion, and red wine. Pour it into the first pan to deglaze soy sauce and onions. This will infuse the burnt soy sauce much heavier, add butter to thicken. Take out and don't rest. You want juice to flow out of steak onto the rice, resting is for moisture retention. The sauce is one will give the moiture back to the steak.

I made this and it was one of the most delicious things I’ve ever had. I was surprised because of all of the onions… But it turns out that when you’re deglazing them with red wine and all the juices from the meat, the onions turn super soft and upon tasting melts in your mouth completely. Then you have the juicy steak underneath. It’s fucking awesome! But your kitchen will stink so make sure to clean all the dishes.

Only thing you missed was to pound out the steak before putting it in the onions. But otherwise it looks beautiful and I bet it tastes amazing.

How does the meat stay on the rice????? Me: using chopsticks and the rice fell off, but the meat stayed on the chopsticks. My teeth: bit my mouth instead of the meat.
