Fluffy Chocolate Chiffon Cake

How to make a Chocolate Chiffon Cake that melts in your mouth. This does not shrink even when it's cooled down.
Here's what you'll need:
1/2 cup hot oil (125ml)
3/4 cup pure cocoa powder (65g)
1/2 cup sugar (100g)
3/4 cup milk (190ml)
2 tsp vanilla (10ml)
8 egg yolks
1 and 3/4 cup cake flour(175g)
1 tbsp baking powder (10g)
1 tsp salt (5g)
8 egg whites
2 tsp of lemon juice
3/4 cup sugar (150g)
You can half this recipe too:
1/4 cup hot oil (60ml)
1/3 cup pure cocoa powder (30g)
1/3 cup sugar (65g)
1/3 cup milk (80ml)
1 tsp vanilla (5ml)
4 egg yolks
1 cup cake flour(100g)
1 and 1/2 tsp baking powder (7g)
1/2 tsp salt (3g)
4egg whites
1 tsp of lemon juice
1/3 cup sugar (65g)
-I used large eggs in this recipe. 55-60 grams each with shell.

3:08 Add the egg whites in three additon. First is to loosen the base mixture.
3:45 Fold until you achieve a homogeneous mixture.
3:56 Gently pour the batter to a 9x9 inches square pan lined with parchment paper.
4:09 Run a skewer and tap to eliminate excess bubbles.

Will make this tomorrow! Update: Made it and its perfect! So soft like cotton and the cake didnt shrink at all. It was all gone the same day 😄 highly recommend this recipe 😊
This is really underrated! I tried it in a rice cooker and it ended up even softer and lighter than expected!
Thanks for recipe . My pineapple chiffon cake using your recipe shrinked, but was good ! So this is nonshrinking,👍 It's the best way to add cocoa powder to hot oil . Nice texture.

can you make pandan chiffon cake with half of the recipe too? most of your recipes yield a large amount and usually its difficult for us to finish it.

For pandan cotton cake try recipe by KZreadr mykitchen101en. If you don't have fresh pandan leaves like I did, I replaced it with more coconut milk with added a few drops of pandan paste (Chinese shops sell them usually). Good luck

Hello Cassie, chiffon cake can shrink for several reasons. Please use aluminum ungreased pans. Beat eggwhites correctly, you cant underbeat or overbeat. Just keep an eye out for the eggwhites as they thicken.

The cake looks beautiful & delicious, but it is not a chiffon cake; a chiffon cake has oil in the recipe. This cake is an example of a sponge cake.

Hello! I'm a big fan of your work, in my country people make anniversary cakes using sponge cake and it is usually quite dry, you need extra syrup to change its texture; since I discovered the chiffon cake no more syrup, this cake is amazing, so moist and fluffy! I have a question for this recipe in particular - are you sure the conversion of flour is right for 8 eggs? For 4 eggs, it is 100 grams and for 8, 175 grams? It shouldn' t be 190, 200 grams? I have cups too, but in grams it is more precise, I think. And flour is crucial, I think, for any cake - both as for quantity and for quality. Keep the good work and thank you for your amazing recipes!

Is the 1/3 cup sugar a requirement in the first mixture? Would like to omit it if I can since the egg white mixture already has 1/3 cup of sugar

Yes my dear, you can adjust from 1/2 cup to 1/4 cup after the cocoa was added.😊

You can use white vinegar or cream of tartar instead of lemon juice. The acid from which of these three stabilizes the egg whites.
