It's an acronym I'm guessing only learned in American schools and it stands for F-First, O-Outside, I-Inside, L-Last

(x-1) is being multiplied by (x-1) when he uses the foil method there, and a number times itself is that number squared, so it's (x-1)^2. And yeah, I know I'm 4 months late to your question, so it might not be relevant anymore.
