Finally Nailed This Recipe | Tortillas for Pantry Pork Tacos

What's for Dinner: pulled pork tacos from our own home raise pork. I slow cooked with a jar of salsa Verde, a couple heaping tablespoons of homemade taco seasoning, some sliced onions a our frozen bell peppers. But, we needed tortillas and I'm on a mission to find a recipe that meets our expectations. it must be thin, soft, pliable and not tear when rolled.
This recipe is the closest so far:
3 cups flour, 1tsp baking powder, 1tsp salt, 1 cup warm water, 1/3 cup oil. mix well until shaggy dough, knead for 2 mins, form in 16 equal dough balls, cover and let rest 15 mins. roll out on floured surface as thin as possible or 1/16 inch. cook in dry cast iron pan over med-low heat 30 sec - 1min per side.

    I agree. There is no acid in there to help it rise. Using lard or crisco is best.

    Just made tortillas and a older lady told me to use close to boiling water and mix with wooden spoon until it's cool enough to handle with hands. Let your balls rest for 45 minutes and try not to use to much flour when you are rolling them out. Made them last week 🙌 best tortillas I've ever made!

    My best friend's mother made tortillas almost daily for 9 children. She used a round crockpot to keep them warm. She heated it up then shut it off when she started filling it with the freshly cooked tortillas. HOT water, lard, baking soda and water. She flapped them in her hands a few times after she rolled them out. Oh how I wish I could watch her again

    Rachel... I am not sure if you know this, but a tortilla press is for corn tortillas and the flour tortillas are always rolled by hand with a rolling pin. The reason you can not get your tortillas thin enough is because you are not letting them rest for at least half an hour. Usually if you put them in the refrigerator for a little while and then try to roll them, you can get them pretty thin. I have left my dough in the refrigerator over night and they turn out great.

    @@dianetucker2711 You would have to get Masa Harina or Maseca. It's specifically for corn tortillas. And you would leave out the baking powder. There is a recipe on the back. And plenty of youtube videos as well. It's just as delicious, and a little less messy. Good luck!!

    Glad you seem to be recovering well from your surgery. I’m 5 weeks out and still in a lot of pain. I take Miralax every day too. Tortillas looked fantastic.

    The water has to be very warm. Right until before you can't touch it. You're doing everything absolutely awesome! Lard will make a better tortilla. Also, the extra flour makes a difference. When making the balls to let them set up for 15, don't add the extra pinch of flour. When rolling it out a pinch of flour is okie dokie artichokie. The pan we use is cast iron. We call it a comal. Pro tip: after you've cooked them, place them in a tea towel that's in a tortilla warmer...but I just reuse a Walmart bag or what not. Keeps the moisture in and keeps them fluffy and pliable. You did great!! Good job hun, I bet they're delish💛 also, non of us really eat them thin hahaha carb overload 😂

    I agree. Her' recipe is my go-to tortilla recipe. Perfect every time. I use one of those silicone mats with the circles so you don't need a ton of flour and I can use the circles as guides to the tortillas I'm making.

    I have a recipe that turns out great everytime. From a Hispanic taxicab. 2 c flour, 1 top salt, 1 top baking powder, 1 T shortening and hot tap water to get to moisture needed. Ive use less than a cup.

    Kudos for making your own tortillas Rachel. Who needs a basket when you have a tea towel? Just move tortillas to a plastic bag and seal afterwards to keep them soft.

    Reminds me of when I was in college, and some Costa Rican friends made their own tortillas about every day. They used one of the old school "Melmac" brand plates - if you look at the bottom of those, there's a ring around the base. They used that as a press for the balls of dough, and each and every tortilla was identical to the others and the perfect thickness. Then they toasted them for a bit on a rack they'd made out of a coathanger, above an open flame on a gas cookstove burner. Ingenious!!

    Rachel, if you want to use lard you can melt it and let it cool a few minutes, also knead your flour a little longer ! I let my dough rest for 30 minutes , then make the balls and let them rest 15 minutes covered before rolling them! Great looking tortillas!

    A few suggestions. Mix with wam / hot water , mix with wooden spoon. Give them a rest time to cool off. The tortilla press is for corn tortillas and will not help with corn. You could try using a pasta roller, like the attachments for mixer. Helps when you have to make a bunch.

    Like you, Becky from Acre Homestead recently tried oil rather than solid fat to her tortillas and like you, they came out great. The oil must be the trick! Nice to see it on two different videos…thanks for sharing your experiment.

    Word of advice cover the dough balls with a damp towel and after cooking cover them. I use lard from the store in a can. But, I may try the oil method. I saw simply mama cooks I think that’s the channel I’m subscribed to make tortillas 2 yrs ago or so. I can make tortillas but I’m not good at rolling them out and I have a press I use to start them. It helps me. Love the channel and your dinner looks delicious.

    Your doing a great 👍 job, but just a thought from a Mexican friend of yours, that has been making tortillas since I was 12 yrs old you are not adding enough water the dough shouldn’t be so shaggy and dry, try to use your hands when you’re mixing your dough so you get the feel of the dough a little softer, so that way when you roll them you can roll them thinner. Just a thought ❤

    Failed jelly is one of my favorite ways to have wonderful syrups! I currently have beauty Berry “syrup” and red hot apple pie “syrup”. Last year I had a fail with my gingered pear jelly and everyone now asks for my pear sauce, so this year I made that with the pears.

    i put my tortillas directly into a tupperware with lid after frying, so they steam themselves and stay soft. works well!

    Need to need dough longer until smooth n elastic also divide into a medium meatball size portions. If you have one, easier to use French rolling pin. Should raise bubbles and becomes opaque in color. The griddle/pan should be hot enough to cook in it 45 seconds per side. If the griddle is too cold it will cook but when cool becomes brittle and is a bad reheat. JMO

    I love your channel but if you use your tortilla press put a piece of plastic between the press put the plastic at the top and at the bottom of the press and spray it with oil and then just press them and they'll come out perfect and they won't stick

    I made peach jam last year, doubled the peaches, went to a pageant for my niece, came home to finish it and forgot to double the rest. It was delicious, but of course didn’t set for jam. I liked it in yogurt so much I did it wrong again this year. Some failures are wins.

    Making tortillas with lard comes from experience. My mother always made them with lard and the were the best and softest tortillas I’ve ever eaten. I’ve never had tortillas that compared to hers. Not once. She would knead and knead and knead. And then let them rest for 30-45 min. she didn’t use a lot of flour to roll them out and she rolled and rolled and rolled. So it’s all about the experience you have making them. Many people make them with oil or butter. And that’s fine, but to me they don’t taste as good, but I will still eat them! 😄 Also: enchiladas should always be made with corn tortillas. I know some people use flour for enchiladas, but these people are wrong. JK, kinda. Not really. Also, they get hard or crunchy when they are cooked too hot and/or too long. As soon as they bubble you should flip them and pull them as soon as they puff a little on the other side. Just a tip. Do as you do! I’m just throwing thoughts out. I’m 49 and have been watching my mom make them my whole life. Sadly I never learned to make her tortillas and so I don’t make them often. I just can’t roll them perfectly round like she did. 😢

    I used to make my own tortillas years ago when I was young and stupid and didn't know I could buy them at a store, LOL, now however, I'm always either disappointed with the doughiness of the tortillas or the extortionate price!!     In india we have wheat flour tortillas called chapatis/roti for both meals in which it’s just flour and water but u did an amazing job rolling so thin as normal flour pulls back kudos 👍👌👌

    Hey there! I love love love this. I know I mentioned before that I also make my own tortillas. The exact same recipe. I use sunflower oil. It's lovely. And I'm going to say again (apologies) that you should try cactus with it. Cactus by itself or cactus salad. I do think that you would love it. And the cactus salad, you can make as spicy as you like, since I know that y'all like the spice. I'm getting so hungry watching y'all eat. The good thing about the tortillas is that if you have a free day to just make a whole bunch, they keep really well in the fridge. Except for the fact that mine keep disappearing before I plan to use them. 😁 Thanks for the video!! 💖💖💖

    I made flour tortillas a couple of weeks ago because I hadn't realized we were out. These were my best tortillas ever. I rolled them out on my pastry mat, which made it easier (for some reason) to keep them circular, and I was able to roll them to the correct diameter, which meant they were the right thickness. I was so pleased, and everybody liked them. Tried to restock on store bought and the store hasn't had any tortillas the past 2 weeks! So I'm super glad I figured out the secret to good homemade tortillas.

    Rachel, there is a channel called "Views on the Road" They do everything authentic mexican food. They have an awesome video on making flour tortillas. There is a flip and strech that a lot of people that make tortillas use and it gets them thinner after they are rolled out. Hard to describe but once you see it try it and just keep trying it is an acquired skill. I have been making tortillas a long time and I still don't get them right all the time. They still eat. You can freeze those tortillas, put them in a zipper bag and get as much air out. Just make sure to let them all thaw or they will stick together when you take them out. Great meal and very filling for these cold days.

    I think the key is using oil instead of lard, watched Becky at acre homestead make the same thing using oil instead of lard, she was finally happy with her outcome. It's going to be her go to recipe and sounds like yours also. Meal looks very yummy!

    Yumbo; When i make my peach salsa, i mix it in a huge bowl and I always have liquid left after the jars are all filled. I can that also and use it in mixed drinks;

    I make my tortillas with hot water. The only flour I use is that the recipe calls for. I don't knead mine. I separate them into 16 pieces. Then let rest them for 15 minutes under damp towel. I use use my tortilla press to get them flat. Then I use the wooden rolling pin to get them thinner. Once you roll them out you can put parchment paper between each one, put them in a zip lock bag, and refrigerate them until you are ready to cook them. They will last for a few days.

    Thank you! When you did your Crock-tober dish I asked you to show us how you made them 🥰 Also...in watching your post on making cake mixes in jars you shared that you need the white processed sugar for that! Thank you so much for sharing that! I'd started using raw cane sugar but did not know it wasn't good in cakes so I've had two pound cakes that were just plain ugly schmugly! Now I know why!     You might have better luck with a bit of dowel wood (like a piece of broomstick). I don't know why it makes a difference but it does. Also, I think you may need to knead the dough longer to improve pliability. I shoot for 1 or 2 minutes in my stand mixer, which is more like 8 minutes of hand kneading.

    Thank you Rachel, this was very motivating for me to try making flour tortillas. Thanks to everyone else who added tips, too. That mulberry syrup sounds wonderful. Making yummy beverages with it is a good save. I have some blackberry "syrup" I will give my brother some, since he is the big cocktail maker. I recently made my first apple based fruit leathers in my dehydrator. I used 2 year old canned apples and applesauce. Also mixed in some rehydrated and pureed cherries to applesauce. Hubby really liked that. He said he would love having my homemade fruit rolls in his lunches. Big compliment there! I think you could use some of your mulberry syrup in a fruit leather, and it would turn out nice. I'm going to be doing some more with peaches, pears and some of my blackberry syrup.

    We mix our miralax with prune juice and the juice helps also

    Buy a tortilla press. They are very thin then. The presses are not expensive. I have a cast iron one. We also use a scale to weigh the balls.

    I like making tortillas with avocado oil, they come out much softer and are so good. I am about toake a batch for enchiladas shortly.

    tortilla presses are for corn tortillas. You have to use a rolling pin for flour tortillas

    I am going to try this too....I want to learn to make my own too.... maybe even try freeze them to have a few on hand 👌 I have never heard of ginger beer? Sounds yummy!!

    Rachael I bet if you use one of the tiny wooden rolling pin the tortilla making mamas use, you would get the thin tortillas you want. (Mira lax)

    I always had trouble getting them thin also and saw a video that they replaced the lard with the oil and turned out smoother more pliable dough, been doing it ever since. The pork looked great.

    My best results with rolling tortillas are when I do not kneed and roll in flour, but actually lightly oil the bench instead

    Took me months to master flour tortillas. Here is what i use. Ingredients: 3-cups of all purpose flour Half cup shortening 2 and half tsp salt One and half cup of hot water. Steps: Mix flour & salt Add shortening work in flour until a sand texture. Slowly add water. Mix dough until nothing sticks to bowl. Make big ball dough pat with extra shortening. Cover with kitchen towel for twenty minutes. Then form balls. 😊

    I use HOT water, as hot as my hands can handle it because it denatures the proteins relaxing the gluten so that it doesn't continually shrink back after rolling.
