I first met people from the Philippines on my many cruises. They were, by far, the nicest of all the crew IMO. I discovered your channel today and watched every episode of this series so far and I am so happy to see that, what I perceived on the ships, is not a façade but a real, genuine, reflection of the people. I am genuinely interested in this country as it mirrors so many things from where I live - Puerto Rico. I know that the adobo there has little commonality with how culinarily the word is used here but still something common (here it is more of a rub/seasoning rather than a saucy style of cooking) and, of course, we have a great lechon here too (see Anthony Bourdain). I find it interesting how both the Spanish and American influences are still present in both places (to completely different degrees of each but present in any case) after such long times have passed from their respective colonial rules (well, here in Puerto Rico we are still a quasi-colony of the US). Also, the landscape is similar which is nice. Absolutely fascinating and I look forward to future episodes.

In the Philippines you can walk into a family having dinner and they wóuld be happy to invite you to join them …in fact they would be kind of offended/disappointed if you decline . Just a quick note, some consider it as an insult when you refuse after you were invited to eat. Filipinos value friendship through food.

Hospitality in Filipinos culture are very common …it’s in our blood to give and care I guess… Kinilaw means: A Filipino dish (ceviche) consisting of cubed raw fish (any whatever available of the day in the market) or sea fort. And then marinated in vinegar or calamansi (calamondin) small citrus juices along with vegetables and spices.. enjoy travelling..🫶🏼🇵🇭🇨🇦

Absolutely amazing family, it was so nice of the family to invite you in. Every time I see the hospitable people makes me want to visit. I understand why you choose to visit. Seems to me like that is “ Philippines” the friendliest place on Earth. The camaraderie is mind blowing. Have a great time!!

Fireflies are a good indicator that the environment is pollution free.😋😋 A common greeting towards people ( family, friends or strangers) is " Kumain ka na?" ( Have you eaten?) , Followed by " kain tyo" ( let's eat) 😋😉

Actually, kinilaw or kilawin is a Filipino version of ceviche. It can be anything. Seafood and even barbecued meats. Very good as a pulutan, which is drinking food. And the reason why it was black is because of the ink from the squid. So crazy how sometimes the poorest people you come across the Philippines are the most generous. Happy trails

never ever feel like you're intruding especially when someone asks you to join them for a meal. They may even feel offended that you didn't join in. BTW, "kinilaw" is anything raw that is "cooked" in citrus and/or vinegar.

Speaking about hospitality, I hitched a ride with an American guy from DC to NYC 20 years ago. He invited me to ride with him when he overheard, while I was checking out of my hotel, that I was going to NYC and that he too was going there in a rented car. The hotel receptionist told me that he was a frequent guest at the hotel and could vouch for his character. So I accepted his offer. On the way, we stopped at a service station to fuel up. He also grabbed a burger for himself only. He ate in the car while he was driving. He did not offer me a bite hahaha. If I was the one driving, and he was my passenger, I would have offered to buy him a burger as well. But i did not mind it because he was also hospitable in his own way by offering me a ride for free. The cost of my ride surely was much greater than the cost of the burger.

Something common in Southeast Asia, in Malaysia the common greeting would be "Have you eaten?", we just take it a little further since we believe that food is grace from God and meant to be shared. Besides, strangers become friends over a good meal. Keep on doing what you're doing and enjoy the true beauty of the Philippines

Siargao has been ravaged by a supertyphoon last december 2021 most of the residents are struggling really hard to recover from the loss. and it amazes me how despite the odds they remain hospitable and in high spirits! nothing really dampens the Filipino way and hospitality.

Kinilaw literally means raw dish. It comes from the Cebuano word “kilaw” which means to eat raw. Kinilaw often use seafood and douse it with vinegar and lemon to cook the meat with acid. Ginger and onion are then added to the mix. Many use radish and cucumbers to add volume to the dish.
