I made this for the first time tonight; my husband and I both really liked them. Served them with a side of black beans cooked with vegetable broth, garlic, chili powder, cumin and bay leaf.

I made this recipe today and it was so delicious and easy to make. I also added a can of black beans that I had rinsed. Thanks for a wonderful recipe!

I just threw this in the oven. Great recipe. One thing I like to do is rinse my rice first. I always feel better after I rinse it. Can’t wait to try this when it comes out of the oven.

Wow!!!! This looks SOOOO GOOD!!!!!

This was a VERY delicious recipe...with one caveat for those wanting to make it. Catherine, you mentioned that when you use your homemade taco seasoning, you like to use 3 tablespoons which is equivalent to one packet of taco seasoning and I would say you are probably right as far as sodium levels go. However, to further clarify, If you are using the bulk container of Old El Paso, USE ONLY 2 tablespoons. And if you use an Old El Paso pouch of taco seasoning, use the whole packet as it also is only about 2 tablespoons per packet. Hope that makes sense. Basically, if it's Old El Paso seasoning, packet or bulk, use only 2 tablespoons or it will be pretty dang salty even for someone like me who enjoys salt. Alternatively, if you like things very salty, you could use 3 tablespoons of Old El Paso, but don't add any extra table salt beyond that on your meat or to the broth. Other than me making it a bit too salty from using 3 tablespoons of Old El Paso, it was still VERY good and was EVEN BETTER the next day when I took it to work for lunch. I will definitely be making this dish again. Try topping this with some salsa, a spoonful of sour cream, and a little bit of Texas Pete hot sauce if you want to add a little extra flavor.
