One of my gobto skillet dinners is: 2-3. Potatoes diced. One small onion and a small green pepper diced. Heat the skillet and add fat of your choice. I use butter. Add potatoes, onion, and pepper. Cook until browned, but potatoes are not really soft. Add a sliced in bite-sized pieces one kielbasa. Cook until kielbasa is hot and potatoes are soft. It is delicious!

I'm also a bachelor and also love the one pot meals. That's one of the reasons I have a small 1.5 - 2 quart slow cooker. There's nothing worse than making a large, complex meal and having to throw out the leftovers because I get sick of eating it over and over again. . Catherine, if I were making this, I'd make a couple changes. First, I don't like peas, so I wouldn't use them. I would substitute bell peppers and some diced tomatoes. I would also use brown rice or even cous cous.

Awesome recipe! We had it for dinner and then leftovers today. Very easy to make. We added mushrooms instead of the peas. Only because I didn't have the peas. Liked and subbed. 🥳

Oh, home canned home made french onion soup is the best! Mine sits on the shelf right alongside the home made tomato soup. It's where I go first when I need a good attitude on a gloomy day. I mean, the white bean and ham is good, and the beef stew is filling, but the french onion and a good love story book is just fulfilling in a different way. 🥰
