    Wow, I used to watch my grandmother make 20 litres of this usuu for church events in shags. Seemed so much work especially pounding with the large traditional pestle and mortars. Now I can replicate it thanks to you. Thank you ☺

    In Kikuyu, its called 'Ucuru wa gukia', which basically sounds like the Kamba version. Thanks for sharing.

    I was raised calling it starchy milk because it separates upon sitting as seen in your video the starch settles to the bottom. It is the same principal as making almond milk and soy milk. Thank you for sharing beautiful sister. Love your videos!!!

    I must commend you for your work. You have turned me to a chef with your recipes. I have another uji suggestion. Please a Swahili type of uji called Uji Wa ngano. Its so delicious sweet and diverse. Please!!! Swahili people can cook and I so want to serve that uji to my family. My son loves it. Please please please.

    we call it, usuru wa gukia and we use two stones for grinding. good stuff dear.

    Thank you for the feedback. Yes it can also be done using two stones. The uji that I have seen being done this way is the one for millet and sorghum because of their small size which makes it cumbersome in a pestle and mortar. In fact, some people also grind the millet with some sweet potatoes and then ferment the mixture. Good stuff. :))) But yes, maize is also ground using the two stones as you have said.

    +Josie M Yes you can use frozen corn. Just let it thaw out completely and then follow same procedure. And thank you for the feedback about my recipes 😃

    Thank you for the love and support. I have been toying with the idea of recreating traditional recipes for the modern kitchen. It needs lots of research and once I'm satisfied I will starting shooting videos of the same. Please stay tuned. Ugali wa wimbi is something I have never attempted, I have eaten it though. I will just have to practice and perfect it first.

    I have a video coming out soon, next week most probably, for fermented uji from millet. You can use the same technique to make corn meal uji.

    I am still working on fine tuning the cake recipes because baking is more technical and precise. I wouldn't want to give measurements that might end up backfiring on guys. But, soon and very soon.....

    I have a question I'm in Europe and is not easy to get young white maize or milet but they have cassava flour can I use that to make uji? and how thx in advance greetings

    Hi, I have never tried cooking uji with cassava flour. However, I have heard that it's very sticky and can tend to become gummy if cooked on its own. So people tend to add millet flour to make it more manageable.

    Jikonimagic thx for advice perhaps I'll check Kenyan shops in Brussels but I fear the price may cost a whole sheep is not cheap to get Kenyan stuff here

    Wow, pole. I think you could check out the Mexican stores because they cook white maize like posoles / hominy (what we call muthokoi here). Also in Indian stores because they make chapos from maize flour - makki. (might be wrong spelling).

    Yes, true. But at the time the blender I had wasn't strong enough to break down the maize. So I had to help it along.

    Oh and this is "Ucuru Wa Gukia" pronounced as osho Wa gokia! In Kikuyu. I love the part about guards and calabashes. My grandma says I should be able to serve my husband this if I want something sweet like money and other things wink* In a calabash!!!
