    I love that you leave the skins on. I do that but most people don’t like it. I think it works great and so much easier.

    I love that too. I’ve also seen people dry the skins and make tomato powder so you can add water and make tomato paste. A good preservation technique.

    I put in about 3 tablespoons apple cider vinegar in my stewed tomatoes in a large pot that size. I save as much as I can also from our garden the things we grow have such better taste than store vegetables and I grow organically too.

    Thank you for sharing this with us. It’s nice to see your lovely wife. I do have a few questions. *Do you put any water in the bottom of the pot with the tomatoes? *What temperature are you cooking them? I’m assuming low to medium? *Can you add Mexican or Italian spices? *Where can I buy that stir stick?

    My wife and I have canned about 10 gal. I like your method, it actually seems to simplify everything. Some things we've done were just common family practices. We used to use a pressure cooker but didn't a few years ago. I bet your sauce is nice and fresh. Don & Diane

    Nice video. I save seeds to grow for next year and I will remove the skins and seeds through a sieve before I add garlic and seasonings for a finished sauce. (All of which I grow on our garden as well). Then can the sauce. Nice pot and paddle!

    Glad you liked the video! Here's two reasons we don't season our sauce or paste; 1. Canning heat causes the seasonings and herbs to lose some of their nice flavor. We like fresh seasoning flavors. 2. Besides using it in spaghetti, lasagna and pizza, we use the sauce for Mexican flavored dishes like enchiladas, bean/chili, and salsa base also. We like the flexibility to season it as desired when using it to make different dishes. It would limit it's versatility if we seasoned it before canning. 😊
