Ingredients:
Powdered sugar 45g
Almond flour 45g
Egg 1 (around 60g)
Sugar 30g
Lemon juice few drops(optional)
Pink food coloring few drops
Chocolate ganache filling:
Dark chocolate 75g
Cream 50g
Butter 5g
Let macarons sit at room temperature for 30 minutes to one hour before baking.
Preheat oven to 150°C with fan and bake around 15-18 minutes. Cover with foil in the last 5 minutes to prevent from over browning.
Add chocolate ganache filling and refrigerate for 24 hours in sealed container.
用料:

杏仁粉 45克
鸡蛋 1个(大约60克)
白糖 35克
柠檬汁 几滴(可不加)
食用色素 几滴
巧克力甘纳许夹心:
黑巧克力 75克
奶油 50克
黄油 5克
晾皮:
将马卡龙室温静置30分钟到一小时,至表皮变干有一层硬壳,不粘手的状态。
放入预热烤箱150摄氏度(风炉)烤15-18分钟,最后五分钟加盖锡纸防止表皮上色过深
完全冷却后挤上夹心,密封冷藏24小时后再享用最佳。
如果天气不给力,还有几种方法可以晾皮,亲试都有用
1.烤箱只开灯不开温度(或30度左右),吹热风(如果烤箱有这个功能),烤箱门敞开,将马卡龙放入晾出硬壳
2. 用吹风机开暖风对着吹,有些人成功了,但可能会出现皱皮现象

你好,鸡蛋一般55-70克之间(带蛋壳称重),这款马卡龙只需要蛋清部分,只有35克左右
