Everything I Eat in 5 Days (when busy, vegan)

→Hi there! This week I took you guys with me, documenting everything I ate for 5 days. This past month has been incredibly busy so most of these ideas are super low effort, quick and easy and pretty nutritious also! For example: Some Kale Caesar Salad, Chai Latte Smoothie Bowls, Raffaello Blended Overnight Oats, Black Tea Oatmeal and more!

INGREDIENTS & NOTES
#1 Kimchi Zucchini Toast
1 tsp coconut oil
1 zucchini
⅓ cup vegan kimchi (eyeballed that amount)
1-2 tsp bagel seasoning
1-2 tbsp chopped parsley
2-3 slices of bread
vegan cream cheese
→ serves 1
#2 Millet Veggie Bowl
⅓ cup millet
⅔ cup water
pinch of salt to add to the water
1 bell pepper, cut into thin slices
1 carrot, peeled into ribbons
1 tsp coconut oil
chickpeas, about ⅓ cup
1-2 tsp bagel seasoning, plus more for serving
1-2 tbsp chopped parsley
for the sauce:
1 tbsp almond butter
1 tbsp soy sauce
1 tbsp white wine vinegar
1-2 tbsp water
1-2 handfuls of greens
→ serves 2

#3 Blended Raffaello Overnight Oats
1 cup quick cooking/small cut oats (90g)
3 tbsp white almond butter
1 ½ tbsp desiccated coconut
2 tbsp coconut cream / full fat coconut milk
½ tsp vanilla
1 tbsp ground flax seeds / flax meal
2 tbsp liquid sweetener
1 cup non dairy milk (250ml)
optional: topped with more desiccated coconut and/or roasted blanched almonds!
→ serves 2

#4 Kale & Hummus Summer Rolls
2 small bunches of kale (g)
2 cloves garlic
1 tbsp olive oil
juice of ½ lime
5 rice paper sheets (i used 3 to fill with kale and then 2 i filled with lettuce + smoked tofu)
2-3 tbsp hummus
1-2 tsp bagel seasoning
→ serves 1

#5 Banana Chai Smoothie Bowls for 2
3 bananas, frozen + cut into chunks
1 ½ tbsp almond butter
2 tsp hemp powder
1 tsp vanilla
½ tsp cinnamon
a dash of each: cardamom, cloves, black pepper
½ tsp ground ginger
¼ cup - ⅓ cup non-dairy milk (60-80ml)
plus toppings of choice (berries, cornflakes, cocoa nibs…)
→ serves 2

#6 Chai Muesli
about ⅓ cup rolled oats (33g)
1-2 tbsp pecans
¼ tsp cinnamon
a dash of each: cardamom, cloves, black pepper, ground ginger
1-2 tbsp raisins
1 tsp hemp powder
1-2 handfuls unsweetened corn flakes
1 handful berries
2 tsp crunchy peanut butter
cold non-dairy milk
→ serves 1
#7 Black Tea Oatmeal
½ cup non-dairy milk (125ml), more for serving
½ cup water (125ml)
1 tbsp black tea bag
½ cup small cut oats (45g)
pinch of salt
1 tsp vanilla
1-2 tsp apricot jam, or more to taste
raspberries
→serves 1

#8 Lazy Kale Caesar Salad
2 small bunches of kale (g)
1-2 cloves garlic
1 tbsp olive oil
juice of ½ lime
1 slice of bread
dressing:
1 tbsp soft vegan cream cheese
1 tsp white tahini
2 tsp soy sauce
1 tbsp white wine vinegar
1-2 tbsp water to adjust consistency
1-2 tsp bagel seasoning
→serves 1
#9 Quick Coconut Noodles
1 bell pepper
1 small piece of ginger (2,5 cm / 1 inch)
1 onion
½ tsp gochujang
1 tbsp tomato purée
1 tsp maple syrup
1 tbsp soy sauce
1 tsp coconut oil
a splash of water
4-5 tbsp coconut cream or thick coconut milk
juice of ½ lime
80-100g rice noodles (2.8 - 3.5 oz)
1-2 bagel seasoning for serving
greens for serving
→ serves 1

    I have never thought about tea infused oatmeal, so I am definitely going to give a go. I am a native English speaker and teacher; we do call it tomato paste in the US. Its because it's thicker and more like 'paste.' You go it right on :)

    Dear! I have been making millet in one way for years now (my mom has been making it this way since I remember) & because it is so so easy and turns out well e v e r y time, I thought maybe you would like to give it a go!☺️: To a small skillet pour 1 cup of the dry millet and roast for a few minutes on low heat until you can smell this nice scent of millet, toss it a bit. After these few minutes, add 1 cup of boiling water (from the kettle) (exactly the same cup so the ratio is 1:1) and cover with a lid. Within 10 minutes you get the fluffiest and the yummiest millet!! Hope you enjoy this little tip! xx

    Girl check Rewe for the 1,5 kg bags of kale - you can freeze it and it's really affordable. I like making a kind of caesar salad with it with chopped apricots and salnuts and fresh orange bits and a tahini lemon sauce soo good! Thanks for sharing your awesome recipes!

    I know how hard it is to find kale in Germany as well. But our turkish supermarket usually has it, especially during winter time. Maybe yours too :)

    I love the tea infused oatmeal idea! I literally eat oatmeal every morning because it is delicious (and I am so lazy). It would be cool to see a pure oatmeal recipe video -- like savory and sweet and everything in between. The blended oatmeal is also inventive! I'll be trying that this week for sure!! My go-to oatmeal recipe is made with cocoa powder and cinnamon and a sauce made with tahini & maple syrup. It's, um, basically desert haha. I also really like vanilla pistachio oats!!

    Hi, I have a tip for the summer roles :) you really don't need to soak it for 15 seconds. I always find it funny when people do that, but I have Vietnamese parents and insider knowledge. You just need to wet them real quick with cold water. You can actually do that under the water tap. And you literally just have to cover every inch of the rice paper in water for one second and it will be soft in like 15 seconds. Just letting you know in hope of making your life easier :D

    You gotta try kale the way my aunt makes it for me! Stir fry a tablespoon of garlic in 3 tablespoons of buter (sounds like a lot but it rlly suits the kale), and add in 1 finely chopped thai red chili. Then throw in a bag of your favourite type of kale and stir fry until wilted. It's very important not to use any other type of fat!!

    My favorite comfort thing to watch is for sure Twilight. Recently I rewatched all the movies while doing crochet and it felt great. Loved the recipes and excited for what's to come! The pink dessert looks delicious!

    Absolute comfort Serie ist für mich how i met your mother. habe sie 2010 angefangen und schaue sie seit dem immer und immer wieder.     Hi Mina! Thank you for another amazing video! I have this really good banana bread recipe if you want to try! (vegan) Ingredients: 4-5 large bananas, coconut oil (any oil will work), vanilla extract, flour, sugar, baking powder and baking soda. In a mixing bowl mash the bananas. Once mashed add 1/4 cup oil and 2tsp of vanilla extract. Set aside. In another add and mix 1 3/4 cup flour, 1/3 cup sugar (add as much sugar as u want, I just like it not too sweet) 1tsp baking powder and 1 tsp of baking soda! add the dry ingredients to the wet and mix really well. The batter should be a little thick. If too dry add 1tbsp of non dairy milk.Then I oil my loaf tin and transfer the batter in. Bake for about 1 hour and 5 mins at 180°C Hope you get to try it!

    Great what awesome, beautiful & gorgeous Mina ate in 5 busy days video. I am surprised Kale is expensive in Germany because in the UK it's stocked in all the major supermarkets including Lidl and Aldi and it's quite cheap but most of it's UK grown ( maybe that is why it's expensive in Germany because it's not grown in Germany). I plan to grow my own Kale this year. Love 🥰 the video and love 💕Mina.

    I‘m obsessed with banana smoothies recently: I just blend a very ripe banana with some frozen cauliflower (instead of ice for some extra nutrients), some water and optional matcha, soo good 😍

    6:00 I live in Kale country (as in, when the NYT wrote an article about kale culture in Germany they came to the village where my grandparents live) so hearing that was definitely a culture shock for me. Where I live, it’s everywhere, even at Lidl. February is a little late though, Kale season starts in November.

    I remember House Anubis! I haven’t seen it in a long time but I definitely don’t recall those… questionable dynamics 🧐 My comfort show(s) will always be Avatar: the Last Airbender and its continuation Legend of Korra! Especially ATLA. I love how warm it makes me feel and how well-done storyline is! All the characters are so easy to love, too 🧡 Side note: adding gochujang to rice noodles is genius! I always make a gochujang sauce instead of the traditional peanut sauce when I make summer rolls because that’s the way my grandma eats them, so having it in rice noodles makes so much sense!

    Actually there are a few theories on how Meerrettich got the name. One of them is because I came across the sea/grows near it (?) (Meer=sea) another one is that it’s bigger than other radishes (mehr=more) but my favourite one is that it’s originally also actually called horseradish in German as well. (Mähre is an old word for horse )

    Yes that thick one is tomato paste in the US. Tomato puree in the us is whole blended tomatoes usually in large cans (tomato pasada i think some places call it) the more watery one

    Heyy I thought the same about kale in Germany, but you can usually find them at farmers markets and quite cheap too! They’re in season still now. Check your local Wochenmarkt 😃

    You can buy ground Millet or ground up your own millet (Haven't tried, but assume its similar to making oat flour) To a skillet heat 1 cup of water till boil, then pour 1/2 cup of ground millet and mix, bring to a simmer and let thicken for around 10-15 minutes until it has a texture like porridge. Super tasty, my nan makes it all the time, I love to add fresh berries and yoghurt to the top, good alternative to porridge if your sick of oats

    I love your recipes and all the "using up stuff you already have in the fridge" ideas and my favourite comfort series is Castle :) it's a crime series, which I have already rewatched about 5 times in German and 3 times in English (although there are 8 seasons haha) so i kind of know every episode but love it :)

    Recipe for chocolate brownie beand cookies - 1 can red kidney beans (250g) - one pear or apple (didn't try with the apple though) - oats 40g - dates, like 5, 6 (30g) - cacao powder 2 tbsp - 4 tbsp maple syrup or more if you wish - one tbsp tahini (but any other nut butter will be fine) - a tsp gingerbread spice - half a tsp cinnamon - hals a tsp baking powdrr - a bit of salt - peanuts 20g - ground flax seeds 10g - sunflower seeds 20g - chocolate optional - blend all of these (i recommend blending the nuts first and then add the rest) - add in the chopped chocolate - place into a baking sheet about 1 tbsp per 1 cookie - bake 25-30 minutes 180 deegres DELICIOUS

    IVE FINALLY MADE A RECIPE :))) -i call it ‘Tiramisu flavoured rice cake’ (This is the recipe for one serving) 1-Get a rice cake 2-make a bowl of un/sweetened coffee 3-Dunk the rice cake into the coffee (make sure it’s fully covered) 4- Apply a teaspoon of vegan chocolate spread (optional) 5- Then apply around a table spoon of un/sweetened yogurt 6- sprinkle some un/sweetened cocoa/cacao powder 7-Garnish with a fruit of your choice (preferably sweetened coconut)(optional) Lastly ENJOY

    i totally get the take on kale. Im also living in Germany and it feels like it's only available for 3 weeks in the whole year and they only have like one head of kale in the entire store.

    I feel like it's the same thing in France. I'd love to eat more of it but I don't thing I've ever seen it at my local grocery store. It's only available in organic stores and it is SO expensive.

    the secret (at least for me since I worked at a farmer's market in FFM for a few years) is to go straight to the farmer's stand to get it in season for a fair price ☺️ hope this helps

    I've been such a fan for so long :) I literally watch every single one of your videos, you are the reason I click on youtube honestly because I'm always checking to see if you have new videos. A couple random things I thought you might appreciate...I saw your tea in this video and wanted to tell you about "full flower tea" if you haven't heard of that. just look it up online, it's sooo beautiful and tastes good too :) secondly, there's this incredible restaurant in Los Angeles, CA. I just went last weekend. It's called Crossroads Kitchen and there's a cookbook you can purchase online. it was seriously the most life changing vegan food ever, and i've tried a lot of vegan food. would highly recommend getting the cookbook for yourself or a friend :)

    Very shook upon seeing a toaster pop up, but love it 💕 These all look really yummy, and relevant to hectic student life, plan to try these out soon :) Tea infused oatmeal sounds really intriguing: have two flavours of tea am curious to try out for this: lemon & raspberry and peppermint & liquorice. Exciting!     If you can find some kale seeds, they are very easy to grow year-round outside. I found some growing in the "wild" near the beach and harvested some seeds from there. Loved the video by the video!

    You can find affordable kale in Germany on farmer markets or in many supermarkets you can find the pre cut in a plastic bag like spinach

Agree with kales are expensive 🥲 same in hk ( or anywhere else) btw, I love to. massage the kale with lemon juice ( or salt /pepper) before I eat, cook later or raw, idk why but The taste and texture seems upgrading!
