Wow there’s a fair bit of volume difference between the two. I have the right one, but I don’t think it’s as quiet.

I really don't understand how the "notte" is considered "entry level" and the Especialita considered "mid-tier". All the especialita has over the silenzio and notte is a 55mm burr vs 50mm which I don't think it is enough to make a jump from "entry level" to "mid-tier". The Especialita does have a digital timer which is highly accurate, but if you are weighing your beans then it makes no difference. The reality is that all these 3 grinders produce the exact same quality grind. They will produce the exact same quality espresso. The notte is a mid-tier grinder just like the silenzio and especialita are... Also in italy the especialita is only like 30 euros more expensive than the Silenzio. Not the almost ridiculous $300 jump we see in the U.S. The big main difference the especialita has over the notte is the profit margin it brings to the store. that's it. They are all "mid-tier" for producing espresso quality grind.

this is the same impression I have gotten (as a US consumer). The platform is very similar from grinder to grinder in the eureka mignon line. As far as I can tell, the only thing that warrants the upgrade is having the silenced one (my notte is loud), but they should all produce similar grinds. The tear down from grinder to grinder is basically identical except the specialita has slightly larger burrs like you say. I think having used my notte for 2 years, my mini review is that it works well for espresso and overall I'm happy with it. it is loud, but had a nice price when I bought it (320 usd, but this was early COVID). The main significant negative is that it's not really feasible to switch between filter coffee and espresso with the way the coarseness knob works, which sucks. You have to go multiple 360 degree rotations, so have fun working with that. I use mine solely for espresso. I think now the df64 looks pretty compelling in the same price range, but it is supposed to be EVEN LOUDER than the notte, which is a bit scary. my notte is like 85dB (I added some crude sound dampening to the inner walls) when I measure the volume at head level next to grinder. The df64 is supposed to be a whopping ~93dB! I'm going off james hoffman's 500 euro grinder video for the df64. I just used my phone to measure dB of my machine, to be transparent. The Niche grinders would be great options if the shipping + GBP to USD conversion wasn't so brutal to US, there don't seem to be any vendors that sell them, only direct sales to Niche. But I'd also add I think they're worth the price, they seem to be both quiet and flexible at changing grind settings compared to the df64 and the Notte/Manuale.

I have the silenzio, and there is some retention. In order to get 18.0g into the portafilter I have to weigh about 18.5g into the hopper. Nothing huge, but it’s definitely not zero retention

I tip and drop the machine a few mm once after grinding to empty the chute on my specialita, which seems comparable, I’m getting around .2g after. As far as single dosing goes, i use the hopper cutoff slide to stop excessive popcorning, but note distribution is still a bit better with 1/3rd filled hopper.

@@amirmahmud9930 it is only 5mm bigger. It makes literally no difference in taste. it is a 1% upgrade. You can always upgrade to the 55mm burr down the line. The Silenzio also is more analog, so more reliable in the long run. Get the Silenzio if buying from U.S. The dosing feature to me seems not worth it either. We are all weighing our input/output so just grind manually. It takes an extra second at most...
