On the occasion of our harvest day, Shavouot, the traditional meals are based on milk products. There is only one place that comes to mind. It is La Ferme Auberge de Poumoué . Guillain, my dear friend, is a goat cheese artisan producer. Some of you may recognize him as I have introduced him before at @TheChateauDiaries (Sundays at the Chateau playlist) you can follow him on Facebook
Today, I'll be creating a meal using the selection of Guillain's cheeses. Of course, no show is completed without a little twist!!
As Dan ( from @escapetoruralfrance )the food critic man samples the culinary delights & gives us his opinion!!

On the menu:
-Crotin en montgolfière: crotin, whiskey, pastry, egg salt and pepper (little honey if you like)
-Salade feta and smoked cheese, sauce olive oil balsamic vinegar with black truffle
-Two cheeses backed potatoes creamed with crotin wrapped with black pepper, fresh white cheese and salted batter
-Valençay cheese toasts with herbs, olive oil balsamic vinegar with black truffle
To drink : Valançay wine
Bubbles
Labneh cheese : yogurt dried in cheese cloth and salt 12 hours , spiced with Zaatar and Olive oil

Merci merci . Pas toutes . comme je disais dans la vidéo , par exemple la montgolfière est ma version du p’tit éclosais de Guillain . L’idée est de cuisiner à l’étouffée, on peut donc remplacer le fromage par d’autres aliments, j’adapte à ma façon . Le salé est rarement raté, j’espère vous donner envie d’essayage et de vous faire confiance

Thanks so much for making me famished for the cheese dishes! I live in a small southern town and I am setting tomorrow aside for the great cheese hunt of 2022. I know that i can’t source these locally but i just know that they will be worth the effort to find and surprise my family with as we all love these kinds of food. Great episode Dana!

חג שמח דנה! I am loving your new videos! I was watching you cook for Lalande and appreciating all of your pork-free creations. What a great idea to do cheese boards for Shavuot! I like to make a salad with all of the 7 foods from the harvest since it is also חג הבכורים. Wheat grains and barley grains (cooked of course) with figs and dates and then feta for the dairy (even though it’s not one of the species) and then I dress it with olive oil (for the olives) and red wine vinegar (for the grapes) some salt and fresh herbs. It’s sweet and salty and tangy. Thanks for the videos! Keep it up!

I make Labanae with Dannons plain yogurt and put it in a white cotton tea towel. Dannon's has the Closest flavor to Israel and Jordan2♥️ You can put it in a colander and inside a bowl to drain

Absolutely fantastic Dana, you nailed it, I love the rustic, natural way you filmed and presented. Nothing fake just good food, wine, easy prep, great ingredients, you’ll tweak a few things as you go along but seriously try and stay with this very rustic style of filming it, I worked in the tv industry for 30 years and it’s actually really refreshing seeing this style of video
