[Eng-Recipe] How to make Steamed cake(Fat gou)蒸鬆糕(發糕)

6-8個材料及份量:清水(water)170g、黃糖(brown sugar)80g、低筋粉(cake flour、low protein flour)150g、粘米粉( rice flour)30g、發粉(baking powder)4g
做法:清水加糖混合融化備用(甜度可自行調較)。
將粉類篩勻慢慢加入糖水拌勻至沒粉粒,倒入模中至九成滿,以滾水大火蒸約10-15分鐘便成。
PS:如想做不同顏色,將黃糖改為白糖及加入適量之色素,便可蒸出不同顏色的糕點。
Ingredients for 6-8 portions :
Water 170g, Brown sugar 80g, Cake flour/ Low protein flour 150g, Rice flour 30g, Baking powder 4g
Instructions:
Simply pour sugar into the water until it has all dissolved in the water (you can adjust the sweetness here).
Sieve the flour evenly into a bowl and slowly add sugar water to the bowl, mix all the sugar water with the flour until there is no lumps of flour (by pressing down on the mixture while you mix will get rid of most lumps). Put the mixture into a measuring cup and pour it into the moulds to about 90% full, steam the cakes for about 10-15 minutes.
PS: If you wish for different colours change the brown sugar to normal white sugar and added an appropriate amount of food colouring.

I have success making the 发糕 follow some receipe my family say very delicious i use brown sugar to make but now i cannot find this receipe because i testing so use only 100g glutinous rice flour 20g rice flour 80g brown sugar water 80g

What is the purpose of adding rice flour? Taste nicer?
I follow you recipe and the result is very wonderful. However, the cake remains strong smell from the baking powder. Please kindly advise how to remove the odor from the baking powder ? Thank you.

To remove the baking powder smell you can steam for a longer time (3-5 mins), I hope this works out and thank you for watching my videos.

Is it possible to replace the ingrediënt "water" with "Cow Milk" or "Coconuts Milk" ?

yes it is possible. I have not tried it before with milk or coconut milk though, let me know how it turns out :)

You can use coconut milk insead of the water but I have not tried cream, hope it turns out well. ^^

Same thing happened to me - came out dense like rubber. Not sure what I miss?
Mine was hard and not light and smiley like yours. It was easy seeing you make it.... but not so for us

Dont worry, the more you try the better you will get at making them. Dont give up :) If your cake isnt coming out very light and fluffy then it might be the mixing process was a little too long or you mixed a little hard. Try to keep a light hand when you are mixing. Hope this helps

今日跟足分量做還做了兩次但還是發得不好中間好像不熟很實不鬆,兩次都蒸了30分鐘,請問那裏出錯?thanks

粉漿倒入模後,要盡快放入大滾水以大火蒸(以免有時間令粉漿沉澱蒸不起、蒸不熟),相信是這方面出錯吧

傳統發糕是用粘米或糯米做的,但現在經過改良配方多用麵粉及發粉(容易控制成品),如不想用粘米粉或糯米粉(糯米粉比較黏口),可以删去。^^
May I know 4gm baking powder equivalent to how many teaspoon.. Anyone can pls advise? Oso how many ml is equivalent to 170gm water? Kindly advise.

tried n failed. d water added seems not enough, 170g will made the dough very thick, n turned out like a rock.

Each brand of flour is slighty different and may need different amounts of water, so if it is too dry try adding abit more water. Hope this helps you the next time you try and make. ^^
發粉係咪就咁唔洗先加水,只需就咁加入低筋粉和粘米粉便可以,對嗎?thx

MCW 1 全部粉類一起混合才加糖水拌勻(每隻牌子的粉受水程度不同,所以加糖水時可能要增多或減少啊)

沒有待醒發,粉漿倒入模後就直接用大火去蒸。
想請教我跟譜照做,糕是弄到開花,但點解糕的質地硬實實得像石頭,不是軟綿的,是我哪個步驟出問題嗎?

如果材料及份量是一樣的話,成品是會很軟熟的!我想是不是水份不夠(因粉類每隻牌子的受水情度不同)或是蒸的時間過長又或蒸的中途不要揭蓋,會映响成品啊!
為什么我蒸了三次都不发呀,我用大同电锅蒸的可以吗 ?

因蒸氣凝聚所以滴下,可用塊亁淨布包著煲蓋,布會吸著水份就不會滴下! 希望幫到你!

shuet yee lai 要水滾後放入去蒸,凍水落會令鬆糕粉漿沉底爆唔開的,不知是否這個原因呢。

shuet yee lai 如果水滾後蒸應該冇問題的,但蒸的時候不要揭蓋,又會映響成品的。但如果又不是這個原因,那麽我都不明白了。^^
