Hi Gals! I made a pot of chilibeans and I used mom's crank grater to grate up my carrots and potatoes (I tried to grate up the onion with it but, it didn't work out as nicely as I was hoping, lol!) but, my chilli beans turned out nice and thick n still a bit creamy. I also added in some diced zucchini and yellow crook neck for color and more vitamins. I'm wondering, do you think using grated carrots and potatoes in your enchiladas would work or would they be too mushy for enchiladas? I'm wanting to try to make them for my folks sometime. ✌️💜🌯🌮🫔
