Empedrat (Catalan Salad)

Today I present one of the most traditional dishes of Catalan summer cuisine: Empedrat.
Refreshing and nutritious, it combines such a variety of ingredients that, in a single serving, it will provide you with vitamins, minerals, proteins and healthy fats.
Besides this, the combination of flavors and textures that you will find in it will be extremely gratifying. What more do you want? You will see how you will repeat.
Although this dish was traditionally prepared with cod, for convenience and easy access to the ingredients, nowadays tuna is usually used. However, those of you who follow me on my channel know that I prefer to use mackerel instead because it is healthier.
If you can find sweet onion, you will avoid the characteristic spiciness of regular onions in your mouth. Anyway, if you don't have access to them and you want to remove a little of the intensity of this vegetable, once cut you can soak it for 1 hour in water and add a spoonful of salt. You will see what an excellent result you get.
As for the salt, you know that I am reluctant to use it too much. In this case, taking into account that the mackerel or tuna already have it and that the olives come well loaded with it, I have chosen not to use it.
The vinegar, traditionally red wine vinegar was used, but you can use white or apple wine vinegar; whichever you like best.
Try not to avoid any of the ingredients because, in this dish, it is the combination of all the ingredients that give it that unique flavor.

400 gr of cooked white beans
1 sweet onion
2 ripe tomatoes
1 red bell bell pepper
1 green bell pepper
250 gr mackerel or tuna in oil
2 hard-boiled eggs
40 stuffed or pitted olives
2 tablespoons vinegar
4 tablespoons olive oil
