EKWANG / EKPANG NKUKWO / African Food eaten in Cameroon and Nigeria

Ekwang or Ekpang Nkwkwo is incredibly delicious! Eaten in both Cameroon and Nigeria, it is a meal made up of grated cocoyams (taro) wrapped in cocoyam leaves (taro leaves) then cooked with red palm oil and other ingredients. It has a rich flavor and hands down one of my favorite meals in the whole world! Hope you enjoy watching me make this African food.

Precious: We call it Ekpang nkukwo ikpong in Ibibio; Ekpang connotes a kind of wrap, nkukwo is the very tender sprout of the cocoyam leaves and finally, ikpong means cocoyam. We share similar culture / ancestry with Western Cameroon I believe.
