Eid Special Biryani | Quick and Tasty Chicken Aloo Biryani |@Nishooskitchen
Ingredients:
For the Rice
- 500gm Basmati rice
- 4 cups water
- 4 green cardamom
- 4 cloves
- 1-2cinnamon stick
- 1 teaspoon salt
For the Chicken Masala
- 500gm chicken, cut into pieces
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- Salt to taste
For the Biryani
- 1 cup ghee or oil
- 2 large onions, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies,
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 2-3 teaspoon biryani masala
- 1/4 cup chopped fresh coriander leaves
Directions
Preparing the Rice
1. Wash the Basmati rice thoroughly in cold water until the water runs clear.
2. Soak the rice in water for 30 minutes, then drain.
3. In a large pot, bring 500gm of water to a boil. Add cardamom pods, cloves, cinnamon stick, and salt.
4. Add the soaked rice and cook until the rice is 70-80% cooked (about 7-8 minutes). The rice should still be firm when bitten.
5. Drain the rice and set it aside.
Cooking the Chicken
1. Heat ghee or oil in a large, heavy-bottomed pot on medium heat.
2. Add the sliced onions , saute it and add green cardamom, cloves, cinnamon stick and black pepper and fry until onion golden brown.
3.Add the chopped tomatoes and cook until they become soft and oil begins to separate.
4. add the green chilies and ginger-garlic paste. Sauté for a minute until fragrant.
5. Add the chicken and cook until the chicken is browned and cooked through.
6. Add turmeric powder, and biryani masala. Cook for another 2-3 minutes.
*Layering and Cooking the Biryani:
1. In the pot with the cooked chicken, spread half of the partially cooked rice over the chicken.
2. Repeat with the remaining rice and saffron milk.
3. Cover and cook for 10min on low flame
* Serving
1. Gently fluff the biryani with a fork.
2. Garnish with fresh coriander leaves and a squeeze of lemon juice if desired.
3. Serve hot with raita (yogurt sauce) and a side salad.
