Hi everyone! Today I present to you a delicious and easy eggplant recipe! Fried eggplant in a super crunchy and flavorful batter, no one leaves you indifferent! You can prepare them for lunch or dinner and will please the whole family. The aubergines crunchy on the outside and soft on the inside are ready in minutes! Try these delicious aubergines in crunchy batter and I'm sure you will do them again many times!
Ingredients:
- 2 eggplants
- 100 grams of flour
- 100 gr of breadcrumbs
- 2 cloves of garlic
- 3-4 eggs
- 80 gr of aged sheep's cheese or other
- Salt, pepper, oregano, paprika
- Fry oil

Here in America I knew an Italian chef very well , he told me this info & the 3 best eggplants starting with the best # 1 Sicilian , least seeds & bitter taste but a little smaller than the next two , # 2 Italian , a little more seeds & bitter taste & not a lot more vs. Sicilian , #3 California , most seeds & bitterness taste of the 3 , but not bad . I put seasoned San Marzano tomato sauce on mine with peccorino cheese ( fresh grated) on that broil 2-3 minutes
