Egg 'n Cheese BREAKFAST PIE with Stacey Mei Yan Fong | Makin' It! | Brad Leone

Breakfast pie... ay yi yi! This really coulda been an episode of Local Legends, because let me tell ya... Stacey, complete Ledge. But it's not! It's an episode of Makin' it! and I get to make pie for breakfast in the studio with the one and the only Stacey Mei Yan Fong. This might be the start of my new career as a pastry chef, folks.
This is the New Jersey pie from Stacey's book, "50 Pies, 50 States: An Immigrant's Love Letter to the United States Through Pie". It's got the #1 best breakfast meat of all time, Pork Roll/Taylor Ham, plus sunny side up fried eggs, good ole american cheese, and a from-scratch poppyseed pie crust. She taught me all her tips and tricks for how to get a beautiful perfect lil edge to her pie crusts, how to roll the dough, how to get the pie crust to brown just right... I'm gonna be the most popular guy at the party next Thanksgiving.

A New Jersey Pie for a New Jersey Guy! How bout that? Ok, now go make some pie please.
Ingredient Shrine:
🥧 Crust
All-purpose unbleached flour - 1 and 1/4 cup
Butter, Unsalted - 1 Stick, cold, cubed
1/2 teaspoon of kosher salt
1 1/2 teaspoons of sugar (white, granulated - or turbinado in the rotao-rooter blender if that's all you've got)
Apple cider vinegar OR vodka (2 tbsp) & cold water (1 cup), combined - used as needed to get the dough to stick together
1 tablespoon of poppy seeds
Uncooked beans, any kind - for pie weights
🥧Egg Washin'
For exterior rim: 1 egg and 1 egg yolk
For interior base and sides: 1 egg white and a splash of water mixed in
🥧Fillin'
Buncha slices pork roll/Taylor ham, 1/8 inch thick, fried up
Bunch slices of american cheese - about 8
3 fried eggs, sunny side up or over easy, fried in unsalted butter, animal fat, or olive oil
🥧Dressin’
Ketchup
Hot Sauce and/or Maras Biberi red pepper flakes (optional)
Swolt and Pep (add to taste - most breakfast meats are pre-swolted so proceed carefully)

    Yup, cuz Brad is a talented and experimentative and creative wonderful human whose true talent is bringing people together and one of Brad's hobbies is cooking. They also include travel, fishing, meeting new people, woodwork, knife craftsmanship, pottery. His favourite movie is the Home Alone series.     As a geology hobbyist, people don't usually smell rocks because they don't really let off particles unless they are broken or otherwise damaged like if it is water soluble. We do, however, lick them. Licking allows people to taste if there are any compounds detectable by our human tongues like salt, & if you've ever waxed a rock or oiled some wood, you know that you can sneak a peek at what the final oiled product will look like by wetting it. Saliva lets us look at rocks better. Btw, most "crystals" are actually many many crystals. Your pyrite is not a crystal unless it is one solid cube. Your salt is probably individual crystals. Your quartz minerals are probably not crystals, your agates nearly absolutely are not. I love it when u believe they have smth abt them we don't understand yet, whether it is psychological associations & placebo effect, or the refractive (light/energy) or sonar (vibrational/kinetic energy) properties, you can believe they do that, but don't call them crystals, especially when they are not, like obsidian or tektites. ...or keep calling them crystals so the science nuts can filter out everything you say & ignore you. I personally believe that there is a little something-something going on despite my (or in accordance with my) scientific love of rocks & minerals.
