Egg Boats Recipe
Really easy, quick and so appetizing, these egg boats are crispy on the outside, soft inside and are great served warm alongside some fresh salad.

Ingredients
Makes about 2-3 servings
2 demi baguettes
4 eggs
2 tbsp (30g) heavy cream
3.5 oz (100g) bacon slices
1/2 cup (50g) Cheddar cheese
1/4 cup (25g) Parmesan cheese
2 spring onions, chopped
salt and freshly ground black pepper
1.Preheat oven to 350F (180C).
2.Cut bacon slices into smaller pieces and cook to desired crispness. Set aside to cool.
3.In a medium bowl, mix eggs, cream, cheese, bacon and onions. Season with salt and pepper.
4.Cut a deep “V” through the top of the baguette and partially unstuff the baguette. Place the baguettes into a parchment paper lined baking sheet.
5.Spoon the egg mixture into the prepared baguettes.
6.Bake for 20-25 minutes until golden brown, and egg mixture is set.
7.Allow to cool for about 5 minutes, cut and serve while still warm.

I love this bread. I usually put a bowl full of water in the oven with the bread being cooked to create steam, otherwise the bread comes out very dry

+Amin Ori that's a good idea.. for some reason my bread didn't get too dry.. maybe because it was a multi grain one

+Adam Ori What a fantastic idea. I think I will have water in my oven as well to prevent the bread from drying, as it surely will from baking. "Not too dry" is still too dry from me.

Manisha Nakra, yeah just put water in a safe oven dish and put it inside your oven on the bottom so your oven stays hydrated
I love it! Almost a quick way to eat a quiche without having to prepare the crust, for those craving times, so genius :D

Are you sure the bread will not over cooked and burn? I remember, in Jerusalem, in the old time and until recently, they used to cook the dough in the oven half way. Then they put the eggs and continue cooking until done.
