I sit down with Erin Stanczyk from KZread channel “Eat, Move, Rest” that she creates with her husband Dusty, to talk all things food, fitness, and mindfulness. Erin is a mom of two and passionate plant-based eater who grew up in Nebraska and recently moved her family to Florida, and in this episode she shares her health and transformation story. We also get into what eating plant-based in a cold climate can look like and talk about life on social media, raising healthy kids, and how she chose to start over and start creating content on social media. We have a lot in common to bond over so buckle up because this is a fun one!
This episode covers:
- Erin’s health and transformation story
- How she ended up sharing her passions on KZread and life on social media
- Tips for eating plant-based in a cold climate
- Raising healthy kids
- Uprooting and starting over to follow your dreams and desires
- What moving across the country with no family can look like

Yay! Two of my FAVORITE people! I've followed both Ellen's and Erin's channels for many years and I often rewatch their older videos to keep inspired in my plant based journey. I must say that the most difficult part, for me, of being Vegan and living a plant based lifestyle, is not having anyone in my circle of family or friends that follows this path. Literally, no one I know even comes close to living plant based (and their health issues reflect it)! I would love to have a "tribe" of like-minded people that I could share meals with. It's rather disheartening sometimes, to feel alone in my food choices, but there's no way I would ever go back to eating the SAD diet! Thank you both SO MUCH for sharing your experiences, your knowledge, your families, and so much inspiration on KZread! Please know that you are truly helping so many people by being our support system, even if we don't know you personally 🥰

Thank you ladies! This episode was just what I needed. I was a stay at home mom for over a decade but started working almost 2 yrs ago and “convenience foods” have become a norm. Even with my busy schedule I’m going to get back to what I love- making more home made healthy meals and snacks for (and WITH) my family. Hello Erin, from a fellow vegan Floridian!

Thank you both! Erin, your health story and how you approached it at first sounds like a mirror of my own. I think MANY women are in a similar boat. I would come out of the doctor crying because they couldn't find anything but it just felt like I wasn't going to make it. I didn't have ANY energy an would move through my day like a robot and not even remember most of it... it was like survival mode. I had insomnia for years. I would cry when I would see my girls because I felt like I would get to see them grow up. I tried keto as I was always falling back to severally low iorn and I think the process of super low carb was a form of detox for me from the standard American diet. I'm not a meat person so after many years, I had become closer to a plant base diet as I stripped more and more from that way of eating. First went red meat and butter then chicken then eggs and fish and finally cheese. I have been trying for at least the last 2 years to stick to plant based with a good amount of raw and am happy to say that I am about 95% there. The last 5% seems to be a problem of social eating like birthdays or a bite of someones dinner when we go out. The problem I have is that I just don't have even half the energy that I had on keto and my weight has consistently stayed up by a few pounds. I'm on a seesaw of either eating more for a bit of energy but then my weight goes up more. Or the opposite, keeping down the calories to take my weight down but I'm starving that low. I need to have wake up with enough energy to get back to exercise like I used to be able to do but I don't want to consume too many calories. Any suggestions for higher energy but with calories in mind? I have been feeling so discouraged lately. With keto I knew what to do to fix it but I haven't been able to get my body in a happy rhythm in this lifestyle but I just know that there has to be a way... I just need to find it.

Hi Angie, I recommend reaching out to plant based nutritionists and physicians at Plant Based Telehealth who make nutrition a forefront of health restoring to help you along your journey. plantbasedtelehealth.com I'm not able to give any specific advice to your story other than it's really common for those coming out of a keto type diet to retain extra weight for a while before restoring their health and my understanding of it is that the body has to learn and trust that you are not going to starve it of vital carbohydrates anymore. I hope you can find the help you need to feeling your best!
