how do you defend if you don't want to trade rook and pawn for knight and bishop?

Thanks for the comment. Pawn d5 is another way to block. But castle and using the rook to protect is better. Trading rook+pawn for knight+bishop is better for black in this position

The problam arrives when you can't castle

yes. that's why developing pieces early is very important
