EASY Soy Butter Mushroom Pasta!

A simple recipe, using mushrooms, a great ingredient for adding meaty textures and umami flavours to any dish. Despite what you might think, soy sauce and butter result in a rich and salty sauce which is truly delicious here.

Serves: 4
Ingredients (US & METRIC):
250g/ 9 oz pappardelle pasta
200g/ 7 oz Irish chestnut mushrooms with small mix of any other exotic mushrooms you can find in the supermarket, thinly sliced
50g/ ½ stick butter
2 tbsp olive oil
3 cloves of garlic, thinly sliced
1 red chilli, thinly sliced
6 spring onions, finely sliced
2 tbsp soy sauce
1 tbsp oyster sauce
50g/ ½ cup parmesan cheese, grated
Small handful of chives, finely chopped
Sea salt

    Surely gonns try this. I'm a die-hard fan of shrooms. For frying the mushromms, I add the salt only at the very end. The salt will draw water, and they get boiled before they finally start to brown. I'm foraging mushrooms. So, my guess would be to try this with just one species at a time. (This mixture will taste great, for sure.) To learn about the taste of every singular mushroom. They can be so very different! In my book, you are absolutely right to use butter with mushrooms. The perfect match! If you have just a few mushrooms: butter, some salt at the very end. Nothing else. To learn about the specific taste. That is, when you can start "experimenting" with them. Like putting the next batch inside a grilled cheese sandwich. Just my 2 cents. Greetings from the far north of Germany!

    Mmmm, mushrooms are one of my favorite things to eat. This pasta recipe looks fairly simple but I bet it is packed full of flavor.

    Already made this twice, IT'S SO GOOD! I substituted the oyster sauce with teriyaki sauce though and it's delicious !

    I think if you like marmite with pasta, you'll love this. And even if you don't like marmite pasta, you'll love this pasta. In Japan, we have butter soy flavored popcorn (バター醤油) or crisps for sale, and they're very moreish. Also, butter soy pasta is definitely a thing, too.

    Yum! Trying this when it’s just hubby and me. Kids are picky and don’t like mushrooms. What do you mean by “catch”? Do you mean when they brown a bit?

    It’s when they start to stick to the pan just a little bit! Obviously you don’t want to burn them onto the pan, but I think he’s saying to let them start to stick to the pan and get those slightly crispy bits going before you stir them up too much (otherwise they’ll get soft and mushy but with no browned bits)!

    I recommend Kikkoman's soya sauce with the green cap, the 1 with less sodium. Leek instead of green onions?

    I'm going to make this but my husband is not good at handling really spicy food. Would the one chili pepper make this dish really spicy for someone who doesn't eat a lot of spicy food? I've built up his spice tolerance a little bit over the years but the most he seems to be able to handle is a pablano, lol I was thinking I'd add a pinch of red pepper flakes instead but am worried I'll be missing out on a key flavor in the dish...

    You can substitute the chilli with chilli flakes. Chilli flakes are milder and less spicy. The key flavor is garlic and spring onion. Back in the day he didn't use chilli, so it's fine

    Soy sauce and a bit of parm on top doesn’t seems good but if you don’t add parm on top it’s fantastic overall…

    How can 250g of pasta be enough for 4 people? It should be 400! 250 is a slightly bigger portion for 2! Besides that, I love the recipe :)
