Ingredients:
Chicken Katsu (YIELD: for Three Servings):
* 500g chicken thigh
* 1 tbsp castor sugar (this helps to keep the moisture inside the meat)
* 1 tbsp soy sauce
* 1 tbsp cooking sake
* 1 tbsp all-purpose flour
* 1 cup bread crumbs
Steamed Rice (YIELD: for Three Servings):
* 2 cups (320g) of short-grain rice
* 400ml of water
Dashi Soy Soft Scramble (YIELD: for One Person):
* 100ml water
* A pinch of salt
* 1 tbsp sake
* 1 tbsp mirin
* 1 tbsp soy sauce
* 1 tsp bonito powder (if you have it)
