A classic french onion soup recipe absolutely must have caramelized onions. But Finding one that gives you the how and why, is few and far to come. We're talkin proper homemade french onion soup with all of it's caramelized onion goodness and lots of good melted cheese on top. Can't go wrong there.

    Throughout my pregnancy I'd had cravings, but French Onion soup was one of the ones I'd craved constantly. It got to the point where no one wanted to go to our local pub (best French Onion soup) with me because I went so often. I'm 2 months post partum and STILL craving that soup. We tried this recipe last night & I'm HOOKED! I'm about to go to the store to get more ingredients for our second batch as the first is almost gone! Thanks for helping me (literally) feed my addiction!

    This is the best French onion soup I’ve made and I’ve finally realized I never commented to say thank you! It tastes absolutely amazing, even without the bourbon. I think I’ve made this soup 5 or 6 times now and it always tastes great.

    Thank you for being one of the few videos I’ve seen that actually caramelizes the onions properly. Also the pole to pole cutting of the onion is rarely mentioned and it is so important otherwise you get mush!

    French Onion Soup 1/4 cup butter 4 sweet onions, sliced 2 cloves garlic, crushed 1/4 teaspoon salt, or to taste 1/4 teaspoon ground black pepper, or to taste 1/2 teaspoon dried thyme 1/2 cup red wine 1/2 tablespoon sherry 1 tablespoons all-purpose flour 1 quarts beef broth 1 French baguette, cut into 1/2-inch thick slices olive oil, or as needed 6 slices Swiss cheese 6 slices provolone cheese Melt butter in a large soup pot over medium heat. Cook and stir onions, garlic, salt, black pepper, and thyme until onions are soft and caramelized (brown), about 50 minutes. Pour in red wine and sherry; bring to a boil. Reduce heat to low and simmer until you can no longer smell alcohol cooking off, about 15 more minutes. Sprinkle onion mixture with flour and stir until coated; cook for 10 minutes. Pour in broth, stir to blend in flour, and simmer until slightly thickened, about 20 minutes. Preheat oven to 350 degrees F (175 degrees C) while soup is simmering. Arrange bread slices on a baking sheet and drizzle with olive oil. Toast the baguette slices in the preheated oven until golden brown, 12 to 14 minutes, turning the bread over halfway through cooking. Remove toast and set aside. Set an oven rack about 8 inches from the heat source and turn on the oven's broiler. Ladle soup into 6 oven-proof crocks, filling them about 3/4 full. Place 1 or 2 bread slices into the bowls and top each with a slice of Swiss cheese and a slice of provolone. Carefully place filled crocks onto a sturdy baking sheet. Broil soup until the cheese is browned and bubbling, 3 to 4 minutes.

    Made this tonight and it came out beautifully. I didn't have white wine so subbed a not-sweet champagne and it worked fine. Great recipe/technique.

    I made a vegan version of this and it turned out AMAZING!!!! Added a couple tablespoons of vegan Worcestershire sauce and omg I’m in heaven. Used Earth Balance stick butter, 3 vegan beef Bouillon cubes and topped it with the Follow your Heart Smoked Gouda and Provolone, it was perfect and totally hit the spot! “Winter” just hit Austin and this is going to keep me cozy all week!!! Thank you!

    This is one of my favorite childhood dishes too. My mom taught me how to make it. I never thought of adding alcohol tho so I will definitely be interested in trying it (grew up in a dry houshold). I like to make this at the beginning of November when it gets that little chill out. (Ohio here). Keep doing you and totally support hooking up those deals!

    @@whereschippi it's amazing even at bare minimum. I make beef stock from bullion (I know less fancy but you make do when you grow up poor lol) so if even that bit is awesome I've no doubt this recipe is going to be good. I'd recommend hitting up a farmers market since it's the season. You can grab a lot of onions for a great price. :D

    I don't remember using so much alcohol last time I made this but I DO remember starting with 8 pounds of onion and that it took hours! And it was so DELISH!     Love french onion soup, except I don’t love having too much cheese on it or the soggy croutons. I would much prefer to toast the baguette with the cheese, and just use them to dip into the soup. Crunchy and delicious 😋

    Josh, please please please make a advanced, high hydration sourdough video! I keep trying to do Maurizio's "Best Sourdough" recipe with 80% hydration and just can't land the final shaping because of how sticky and wet the dough is. I need the Weissman Wisdom; I need your help! I will also use my recently failed loaf to make this soup. Thanks for the recipe!

    @@DarwinsBeerReviews the easy part is that all u need to do is throw some onions w some butter in a pot, and stock, season, add bread, cheese, and broil. if u cant do this idk what youve been cooking
