easy homemade chicken spring roll filling recipe

INGREDIENTS:
* 1 lbs deboned, and de-skinned chicken thighs
* A splash of cooking Oil for chicken and vegetables
* Ginger
* Garlic
* Onion
* Thigh chili
* White pepper
* Light sauce sauce
* 1 tsp tsp Vegetable bouillon - split into 3 parts. Add to chicken, vegetables, and noodles)
* Salt to taste
* Vegetable - 2 medium carrots, 4 scallions, 1 red bell pepper, 1/2 a medium Napa cabbage, herb of choice is a handful of cilantro.
* 1 cup cooked rice noodles
