was the cake too sweet with the sweetened coconut, considering the large amount of sugar already I the cake? I was wonder if I could use unsweetened instead because I'm worried about it being too sweet

Love coconut cakes, but this recipe is special and I’ll have to make it when the family are down next. I’ve been using John’s cake recipes for a while as he doesn’t disappoint.

I made this and it's wayyy too sweet. I would suggest to put 1 cup of sugar in the cake mixture instead of two cups. You can always adjust sweetness with the frosting. Apart from that, the cake texture came out very well.

I haven't cooked in a long time but after seeing the coconut cake recipe and the lemon curd recipe I decided to try to make it! The cake is out of the oven and looks very good. I've made the lemon curd for between the layers and will make the frosting in the morning and put this coconut cake with lemon curd between the layers together. So far I am so impressed with the ease of the directions and with the video it was a breeze to make. I am so happy with the results. THANK YOU! ❤

Yes Please the Swiss meringue sounds so good. I would love that recipe. I also have used a whipped cream coconut frosting for a cake that is super light and tasty. I can hardly wait to try this. I just made apple fritters this evening with my grandson. They turned out great and we had a great time. Thank you so much.

I just made this cake, but since we don't have sweetened cocunut here I used extra 100 ml of milk and 150 g of shredded coconut. Turned out amazing, loved the recipe!

Just finished making this cake. I am not an avid baker, but it turned out really well. Wasn't hard to do. The taste test ia yet to come tonight. Well, I did sample the icing, and a crumb or two of the cake "accidentally" came off while I was icing it! Absolutely delicious.

I am not a fan of coconut but I love coconut cake. I made your peach cake and it was absolutely delicious.

My aunt used to make a coconut cake for all the members in her family for their birthdays. She had a beautiful special plate she put it on. After she passed away my grandmother gave the plate to me. When we moved it got smashed. I was heart broken. Your cake reminds me of the ones she'd make. Thanks for the childhood memory of her.

This look's like the "Daisy Coconut Cake"! But likely much more delicious and obviously less costly. The Daisy cake is a great alternative if you cannot or don't elect to bake it yourself! My vote is for the Preppy Coconut Cake. Going to make it for my son and his 3 kids next weekend. Can't wait!!!

This looks gorgeous, coconut is my mum’s favourite so I will make the cake for her. I’d love to see the Swiss meringue recipe because here in the UK we don’t have the same kind of cream cheese as North America so it comes out much runnier and hard to decorate cakes with.

I made his Italian cream cake a week ago, it was absolutely delicious! Everyone loved it! I’m going to try making this one too! One of these cakes will be my birthday cake. Yes, I’m making my own birthday cake.

My mom makes coconut cake, but a bit different. The frosting she makes is with whipping cream, and she doesn’t add any coconut to the cake itself. She also layers passion fruit in between the cakes, and that’s what makes it really amazing
