On this video, I grilled up some ribs on my Yoder Flattop in record time! These easy 1 hour grilled ribs were full of flavor and just as tender as a 4 hour smoked rib. The rubs I used were from R Butt's R Smokin Cherry Habanero and my new found favorite Ozark Heat. My family really really enjoyed them and said they had a really good flavor. This is a must try!

    Did over the fire direct ribs last weekend for the first time on my Weber kettle, they were GREAT! Rubbed with SPG/paprika, flipped every ten minutes and basted with Wishbone Italian dressing the last two turns.

    Hi Joe - Those were some good looking grilled ribs. Many years ago I started out my bbq life grilling ribs & chicken but I wasn’t very good at it. The outcome was more of a burnt offering to the gods. Understanding your grill, positioning your coals & the timing of turning your meat makes all the difference. Great job!

    I think we all started like that and as you mentioned, it wasn't good in the beginning. I never used to use a thermometer when I grilled. It was ready when it looked ready.🤣 Thanks for watching Mark.👍🏼

    This video gave me the idea to do ribs on my kettle on the elevated racks over hot charcoal (vents wide open top and bottom flipping every 20 mins). They get done in about an hour and almost taste like pork chops. I've done them a few times to switch it up and really like them. Thanks for the inspiration Joe!

    I watch these guy cooking ribs 8, 9, or 10 hours and my comment always is, WHAT? I cook great ribs on a gas grill in about 2 hours, and spend the rest of my day with a beer and a babe.

    Use a rib rack and go 375-400 on a Weber kettle on indirect heat and avoid that char you’re seeing. You can do 45 min then go direct to slightly char over the dying coals .

    I smoked 3 slabs of ribs on the 4th. I have an HBT smoker and smoked them for 2 and half hours and that was during a heavy rain and they came out great. I cannot understand smoking ribs for 5 hours. My temp was 275.

    My dad has always grilled his ribs hot and fast and they are delicious. It's not necessary to smoke them for hours and hours if you know what you're doing

    @@socratese5 Over medium flames for 15 minutes turning them every 5 minutes just to get a good sear on the outside. Then finish them off over indirect heat for another 35-45 minutes. They won't be falling off the bone. They will have a little pull to them but that's how I prefer them

    Years ago, before I had a smoker I always grilled ribs and that's not an unusual time. That's just the difference between a direct heat source and an offset heat source. Truth is that they were probably done earlier than that. But I used to grill mine until they were brown and then sauce them and remove once that had caramelized. That usually took about an hour total. Hell, even after I built my first offset smoker I still grilled ribs and steaks and smoked most everything else. Grilled ribs are awesome! But I smoke them now simply because I like them better smoked. But if I were in a hurry I wouldn't have a problem grilling them. Those look tasty!

    Depends on what the goal is. If you want smoked flavor, you smoke them long & slow. Else... grill them directly over coals as shown here in this video.

    Louis Berry I think the kettle gets just as hot. I’ll probably use a good brand of lump charcoal and cover the bottom grate. You don’t want it too hot, cuz they’ll just burn anyway. I’ll prob add a wood chunk or chips too for more flavor.

    Yes sir Katz. You can do it in the Kettle but lay a flat bed of coals so that it doesn't flare up. Wait until the coals or char wood is ashed over. 👍🏼

    Smokin' Joe's Pit BBQ I tried it yesterday and they turned out very tough. It took about an hour and meat temp was 200+. I don’t think at the grill it was even close to being 800 degrees. I turned them often so the ribs wouldn’t burn. Yours looked great, mine were a bust. I had high hopes. Not sure what I did wrong.

    Joe, I know that you and a certain other YTer have a debate about this. I believe you can do this. Back in the days of the Great West Rib Shoot out, they would cook em and turn em, cook em and turn em and sauce em and burn em . Beautiful racks! Great job Joe !

    People have forgotten their roots. human have ate fast grilled ribs longer than there have been gate keepers to "properly grilled ribs". I love the flavor of quality pork than I do smoke.

    Not true - grills can easily get that hot. Just watched another fast and hot rib video and the guy had his grill at 700. His ribs were done in under an hour

    Can you do a video of grilling ribs on a Weber Kettle? A lot of people claim you can't direct grill ribs, it has to be low and slow in order to be tender. I think that is false. Yours looked tender. Growing up, I've seen people direct grilling ribs to perfection without burning them whereas they are tender and not over or undercooked. Do you have a method using charcoal briquettes on a Weber Kettle for direct grilled ribs? What would be the ideal temp for grilling ribs on if you have a Weber Kettle?

    Hello shawn, you can cook them on a Weber kettle too. I would put one layer of charcoal on the grate if you wanted to direct grill them. Using the Slow and Sear is a better method but it can be done. 👍🏼

    @@SmokinJoesPitBBQ Great video and tips! I tried these on a Weber kettle today and they came out pretty good. Used about half the kettle with one layer of coals. Since this was my first time trying this I kept the temp about 300. Next time I will try to keep the temp a little lower, ribs came out great but had more charr then I would have liked. Great video and thanks again.

    I was always under the impression that ribs, beef or pork, are brought up to over two hundred degrees to break up the inter-connective tissue and make them super easy to pull apart. But that this process had to be done slowly at a low temp like 275. Grilling ribs quickly directly over coals us no different than grilling a pork chop. So why 200+ degrees? Why not 165?

    I don`t know why you would cut off the end of the rack and trim all of the fat ,that`s flavor and moisture. If smoking them, maybe trim a little,but never when grilling. As for using a rub, never when grilling. Just keep it simple and it will be just fine, salt, pepper, garlic powder and onion powder.The heat and smoke will do the rest.

    Grilled ribs are definitely the way to go. Low and slow is sooo overrated
