Easiest and Fastest Way to Process Bitterleaves | Health Benefits of BitterLeaves

The African bitter leaf plant (Vernonia amygdalina) is a culturally important vegetable for many African countries. In Cameroon, it is also known as Ndole bitterleaves. It is used to prepare a delicious Cameroonian food known as Ndole. Bitterleaves have both medicinal and nutritional value. They are super easy to grow even outside of Africa. They are very resilient and do well in cold climates. Adding bitter leaves to your healthy diet may reduce your risk of chronic diseases like breast cancer and type 2 diabetes.
Bitter leaf (Vernonia amygdalina) is a traditional ingredient in African cuisine. Although it may have a bitter title, its flavor is quite mild.
The process of prepping bitter leaves for cooking is usually laborious and time consuming, hindering its frequent use for making nutritious meals. In this video, I share a quick and easy way to process bitter leaves that also preserves the nutrients.

    I like how the baking soda retains the green colour .We are used to pounded bitter leaf .Can one still pound before taking it through your process?

    Iphy Eddyfunn thanks for stopping by sis. Yes you can cut before, but I was just trying to reduce the amount of time and effort, since it’s easier to cut after blanching. With Bitterleaves, it’s my experience that once you cook it for a sufficient amount of time, the bitterness mellows out. The bitterness provides the medicinal benefits, so I don’t mind it.

    Genius Idea.... but a question.... won't it still be overly bitter?? The reason we squeeze and wash the bitterleaf is to make it less bitter. Will that b achieved by the baking soda??

    Hi adage. I just bought a plant here in Florida that apparently is bitter leaf. I thought I can’t believe my eyes since the last time I had egusi is years back. The botanical name is Veronika rumtanzt and apparently it blooms purple. Is this the right plant? Does your bitterleaf bloom? I don’t want to eat the wrong thing 😂

    The bitterleaaves vegetable that we eat is vernonia amygdalina. Another popular species is Sweet bitterleaf (Vernonia hymenolepis).

    Baking soda tenderizes it. Bitterleaf derives it’s health benefits from compounds they also make it bitter. This method reduces the bitterness enough to make it palatable but not so much that the bitterleaf becomes worthless

    You can if you choose to. I choose not to "wash" as much to preserve the medicinal compounds within the vegetable.

    The bitterness offers the benefits. I don't aim to get rid of all the bitterness with the processing. As you cook the bitterleaves, the bitterness fades
