    I am officially addicted to you, Justine and Ron, and cajoling by twenty-something to watch with me. "What do you appreciate most?" you ask? The order, composure, peacefulness, dignity, skill, decor and costumes are superb....but I love how you and Ron model true respect, kindness, gentleness and love for each other while complementing each other's temperament and knowledge sets.     Watching these videos are so relaxing and make my day, but also makes me so grateful for modern technology. As long as it takes to prepare each meal, I feel like women back then spent literally 60% of their day cooking breakfast, lunch and dinner. Sheesh

    I'd add the egg whites on either plate. I've never put lemon on potatoes allways vinegar, so I guess I might keep doing it, otherwise I believe I know what I'll do eith the chicken I have in the freezer.

    Good question, I don’t know when the actual day filmed compares to the publish date but that was in July so I’m thinking warmer weather.

    Don't know about 19th century murica but this old house from before ww1 in east germany where I'm currently on vacation has this cold (even now in summer) basement where things used to be stored. My guess is they did this too or sth similiar

    Olive oil and lemon juice on the potatoes! Well done! That is the perfect way to make potato salad! Sometimes I add a bit chopped mint and and flat leaf parsley too!

    So the dressing for the chicken is an early form of mayo but with cooked egg yolk rather than raw. In normal mayo the yolk acts as an emulsifier to trap air and lighten the dressing. That's why cooked yolk makes more of a paste.

    @@runaroundsue2199 Up north, some people had spring houses. A spring/small stream would be diverted through a small building that had a trough in it. Food/milk crocks could be set in the trough. The cold water flowing through would act as a refrigerant, at least that is what I have heard.

    @@runaroundsue2199 By the mid 1800s ice boxes were common in households as well. They were insulated boxes that were cooled by large blocks of ice delivered daily. Refrigerators were actually invented in 1802!

    Chicken salad is one of my all time favorites 😋 I bet its just as delicious without mayo, because this looked scrumptious! Funny thing about us Midwesterners...all of our "salads" have no salad LOL The best part of these videos is when Justine tries what she made. I live for her look of delight and tastebud satisfaction.

    The difference in standards of hygiene between 2020 and 1820 are huge. Moldy food was still considered edible if you just cut the mold off so sitting on the counter overnight was nothing. Personally I've never gotten food poisoning from anything other than eating out at modern restaurants. It's unlikely that you will get sick from eating cooked meat that's been sitting out overnight. Can it happen? Yes. But modern people are quite paranoid about it as the standards have changed. It's possible, yes. Is it guaranteed? No. This is from 200 years ago so the standards were different.

    If the chicken was butchered the day before and it's not too hot it will still be good. Could be stored in the cellar too. Most people don't eat food that's freshly picked and butchered, so food safety is more important now.

    Hey Justine, we made this! It was really good! We chopped the egg whites into the chicken, kept the skin on the potatoes, and we used a pressure cooker instead of a fireplace. I have pix but I don’t think I can post them here.

    Chicken salad and potato salad each require mayonnaise as a base. That's tricky when vegetable oil would have likely been a very costly item requiring a trip to the general store each time you ran out. It could be months between those trips. Tallow and lard would have been abundant in a frontier home, but those won't whip up into a nice mayonnaise. They're great for gravies and flaky pie crusts (and soap), but not mayonnaise. Using egg yolks as a base instead is a great idea. Very ingenious!
