The Dyna-Glo vertical smoker was a simple one-person assembly job and the food capacity of this smoker is amazing! It has six removable grates and you obviously do not have to smoke with all six inside at the same time. This vertical smoker can be configured depending upon the quantity of food that is being smoked. It has a small hole in the bottom with included drip pan but I prefer to place an aluminum pan in the bottom with water in it, to double as a water pan and drip pan. The temperature is easy to regulate. Air flow can be adjusted using the vent on the side of the charcoal box, as well as the little chimney on the top of the smoker. Regulating temperature can also be controlled by the amount of charcoal in the side charcoal/wood box. Maintaining the optimal low-and-slow temperature for smoking is easy to master and keeping it going all day is simply a matter of adding more charcoal on top of the already hot charcoal as needed. As far as wood is concerned, you can use a variety of flavors. Be sure to soak the wood chunks for a half hour or so first, before placing them on top of the hot coals. This enables the wood chunks to smoke slowly, vs. burning up quickly. It’s the wood smoke that gives smoked BBQ that smokey flavor. There are several advantages to using a vertical smoker like this, vs. a barrel-style smoker. Should the charcoal and/or wood unexpectedly flare up, the coals and wood are off to the side and not directly below the food being smoked. If the smoker is opened while smoking to spray the food with apple juice, etc. it’s also able to regain temperature more quickly, after the door is closed. I love how this smoker included a built-in thermometer with an easy-to-read dial with a different color for the optimal smoking temperature range. This smoker does not have wheels, which I feel is a plus! I don’t move my smoker around but if I did, it has a handle on each side and I can move it myself. However, moving it should be a very simple task for two people. I have no complaints so far and love how the charcoal box door and smoker door close tightly while in use. It maintains optimal temperature very well without having to add costly modifications to it.

    First off it's a vertical offset smoker, the exhaust vent on top is the outlet for the smoke, the vent on the side of the Firebox is where the air gets drawn in from, and you want to maintain the temperature around 225 to 250 F°. Open exhaust vent 75% at least, and adjust Firebox vent according to temperature and amount of firewood / charcoal.

    Just got mine. First smoke today. Love it. One thing though.....DO NOT USE OR TRUST THE DOOR THERMOMETER. I have a bluetooth probe unit. 30 -60 degree different.

    I can almost smell it when you opened the door. Soon it will be smoking weather here in the Pacific Northwest. My electric smoker is like a little easy bake oven and doesn't like really cold weather.

    No, soaking your wood chips has no effect on how they burn. What happens is the wood basically sits there while the water boils off until its able to get to a high enough temperature to ignite. You are wasting your time with soaking them....

    I sit my wood next to the firebox so that they are warm start to burn faster.. slow burning wood and white smoke isn't what you really want.

    Does carcoal have to be used how would logs do? Also it doesnt look to wide, what is the length of the cooking chamber? Will it be able to handle ribs without cutting them or a brisket?

    Are you able to get your temperatures high enough (250 degrees)? Somebody told me they had difficulty getting the temperatures above 180 degrees because it's thinly built. Just curious before I buy one.

    gotta load it up fully with your coals and wood,temp will go easily up to 300 and maintain trust me,I have the wide body works perfectly.

    I thought you controlled the temp by how open the air intake and exit vents are Intake open fully = fast burn = high temp The exit vent open fully = lower temp = less smoke So to do a low slow cook top vent 75% closed bottom 50% open then adjust as needed

    Hey bud what kind of charcoal do you use? and how long do you let your charcoal burn before you add youre wood? thanks just got this smoker trying to get some good tips and how to use it

    ebayhlf Lump charcoal is best but honestly the regular budget charcoal is fine too. That's just providing the heat. Keep adding soaked wood chunks on top to add flavor. Check the link within this video's descriptions for the wood chunks. They come in different varieties. Apple and Hickory are my favorites.

    ebayhlf I actually put a lot of charcoal in and let it burn for a few hours. For the grates.....spray vegetable oil on them and sit on top of another charocoal grill.

    Apple juice spray is a must for coloration and moisture control. Just be sure to buy 100% apple juice! I always use the cheap store brand stuff.

    I just got this smoker last weekend and i smoked baby back ribs and they were to long i dont know how you got those ribs on with out cuting them in half. I also spent $35 on a brisket i know is not going to fit I wonder how i could smoke it in there.

    I often cut my longer racks in half. I take some of the racks out when I smoke something large like a brisket or a chicken.

    I had to upgrade to the larger version, I love both but I limit the smaller one to whole chickens and such, and leave the briskets and ribs and large shoulders for the big boy!

    Just fiddle with it and get a wireless ambient probe. You'll quickly learn which settings fit your environment.

    LOL great observation! Actually, it held up nicely but after I neglected to cover it up again after my cover blew away during a hurricane, it finally rusted through. I loved this smoker!

    One thing that I often do is smoke it.....keeping it sprayed periodically with apple juice to keep it moist. Towards the end of the smoke, I toss it on my charcoal grill briefly to firm up the outside. That way I get smokey and moist goodness inside and a skin that tastes great and not rubbery.

    You have to smoke at a higher temp.....no less than 275 and 300 degrees is the best temp to smoke at to get that crispy bite thru skin trust me.

    BamaBigSid Try to look at it from the top while the smoker is not in use to determine direction. Shine a flashlight through from the bottom. At night works best. That's what I did.

    Used mine twice now , great for jerky but having trouble getting and maintaining higher heat in the 200 plus ranges. I am considering opening the top vent in the box to full flue size.

    The unfortunately, no. The cover blew off during a storm and it eventually rusted through. I smoker many great meals in it though......great smoker!

    I know this is an old post, but its a vertical offset smoker... Vertical because the meat is positioned vertically. There are also horizontal offset smokers. ;)

    Also try using real wood lump charcoal instead of brickets. And as other said, don't soak the wood. No serious BBQ'er does it.

    Wet wood outputs dirty ( white ) type of smoke my friend. That is not what you're looking for..You want to keep that wood as dry as possible. Stop soaking it in water.

    Look at the guy who did the high heat silicone mod and lava lock door liner thats what i did to mine and it only leaks from door handle and thermometer now

    I got mine 2 weeks ago and did the same. You can put the sealant around the hole where the thermometer comes in and that will stop leaks there. Still working on the handle.

    The smoke should be blue and nearly transparent. Not white billowing smoke.

    @@TheIndianscout Just good airflow. I only use just enough coal to keep temps good with full open dampers. I used lump the last time so even refills weren't a huge issue with smoke. When I used logs I would light a little bit of coal on the grill and use that until the log was burning good. You could also set the log in your firebox and leave the top open until it gets going. Generally speaking you want to avoid yellow flames and white billowing smoke. I really liked the lump on my last smoke. I used B&B. Burns really good and had quite a few log sized pieces.

    … that smoke box is going to discolor really, really fast. It looks nice now, but with regular use, that smokebox itself is going to fade really bad. Hopefully, the paint wont start to chip. It's one thing to have a lot of "gear" in the backyard, but when that gear looks old, and dingy, and rusted, its a NEGATIVE to the look of a house. So, if anyone is hard-working on the "appearance" of their property, you might want to stay away from the grills/smokers that tarnish quickly. I mean, even a 500K front yard will be tarnished by a rusty car parked in the front.

    ... it may not be as bad as all that. Maybe just a ring. And, there are high temp sprays that can be considered. As long as the sides don't fade and discolor.

    Erie Badfish No, smh, it's an INVESTMENT. But hey, as the saying goes, a fool is easily departed from his money. Point is, it won't be a LASTING investment, and for folk who take PRIDE in the appearance of their yards, a crummy looking smoker will detract from it. YOU obviously are not that kind of person, so, move along. Nothing for u to see here

    Who cares what a smoker looks like. Years ago a smoker was a crappy wood box and it worked just fine. I wouldn't use it as a garden ornament or accent piece. Its there to make yummy meat. If it rusts out after a few years it will owe me nothing. Likely though if kept covered between uses it should last many years. An observation, why do so many people feel the need to slam a video that was made with good intent? Looking down ones nose at someone and calling them a noobie is unnecessarily being disrespectful. Point out how you would do something different sure, but no need to insult someone who took the time to create a KZread video. Thanks for the video. I think this smoker will meet my needs just fine.
