    For your other post, unless they changed the design since I bought mine, there are no hooks up top for hanging meat however the Signature Series does have hooks. As far as cold smoking, I've never tried it in this smoker, sorry.

    Just did my first smoke this weekend and it was great. Full rack of baby backs and two racks of St. Louis. Question: why not use a water pan? Or did you just not use one for this vid. I used one and filled it with cold water and it kept my temp right in the sweet spot the entire time.

    Normally I use a cast iron pan of water for anything that I think may come out too dry but I don't use one each time. I will also add a bit of honey to the water pan as well especially for sausages and chicken. I never considered it helping maintain the temps though so now I'll have to experiment. Thanks for the comment!

    I do still own it. Matter of fact, I'll be smoking a small ham today and will probably upload the vid about it. I have a vid on a few mods I made to it as keeping higher temps was easy, lower was a little tougher. Sine the mods, it seems to be working well for me though. Thanks for the question and hope this helps!

    @@universalmoto8187 It's a tough decision, I know. In my opinion, it really depends on how much time you want to spend tending to the smoker while you're cooking. I won't lie, the Dyna-Glo does take a little more attention then some others out there but I wouldn't leave any smoker too long by itself and hope for great results.

  • @universalmoto8187

    @universalmoto8187

    Yeah I mean, I dont mind tending it. For me its part of the fun. But I also wanna be able to do 24 hour smokes at low Temps of like 225°f, so id have to let it sit sometimes. If the temp fluctuates like 15-20° within 6 hours of no attention id be perfectly ok with that. Wouldnt do harm. Those 6 hours would be when im sleeping, prolly let the temp drop to about 200 hopefully

  • @SteeveeDan

    Keeping the temp real accurate with a thin walled smoker can be a challenge. With this smoker if I want fairly even temps, I get a good bed of coals going, close the firebox air door about half to 3/4 of the way and leave the chimney all of the way open. I will monitor the temp and use the chimney flow adjustment to control the temps as close as I can to where I want it to be. Hope this helps!

    @@sullysobur so the air intake on these smokers are pure crap. Horrible design in my opinion. What I did was took high temp food grade silicon and completely sealed the vents. I then drilled a whole and installed a 2 inch ball valve. Excellent temp control now and can hold temps hours+ without tinkering.
