Dutch Baby Pancake with Peaches or Nectarines! It's Peach Season!!!

A Dutch baby pancake, sometimes called a German pancake, a Bismarck, a Dutch puff, Hooligan, or a Hootenanny, is similar to a large American popover. And since it is a Peach Season, we are using Peaches for the topping!
DUTCH BABY PANCAKE with Peaches or Nectarines
Pancake Batter:
3 tablespoons unsalted butter
½ cup all purpose flour
1 cup milk
2 large eggs
½ teaspoon salt
1 tablespoon sugar
1 teaspoon Vanilla Extract
Mix all ingredients into a runny batter.
Preheat the oven to 400°F(200°C)
In a 8" skillet (preferable cast iron) put 3 tablespoons of butter.
Melt either on the stove top or in the oven, until completely melted and bubbly.
Pour in the batter and place in the middle rack of the oven.
Bake for 16-18 minutes. Keep an eye on it. It has to rise and the pancake has to be browned at the edges.
While pancake is baking, make Peach topping.
PEACH TOPPING
1 large Peach or Nectarine
2 tbsp brown sugar
2 tbsp peach schnapps(liquor)
In a medium size skillet add sliced Peaches or Nectarines.
Add brown sugar and heat on medium heat until sugar is melted.
Add Peach Schnapps (or water).
Light on fire to evaporate alcohol or just cook on high heat for 5 minutes.
When your Dutch Baby is baked, place cooked peaches in the middle.
Drizzle with syrup and dust with powdered sugar.
Enjoy!
This is the breakfast that worth waiting 20 minutes for!

    Thank you.🌹 I thought it was complicated to make myself and kept ordering it in a restaurant. Until.. I realized how easy it is to make. I made one with apples and cherries too🍒 😋

    It's called Yorkshire Pudding in the UK, we eat the unsweetened version with roast beef(and many other meats)
