Make your own dulce de leche at home! It's a thick, creamy, perfectly sweet confection made be heating sweetened milk. It has a beautiful nutty color and wonderful depth of flavor, which I would describe as a milky caramel. Dulce de leche is a really versatile ingredient you can use in cakes, cupcakes, sundaes and on cookies. You can't find it in many markets so I wanted to show you a couple very easy ways to make it at home!

    I came here because I have been craving dulce de leche. I was married to an Argentiean for 20 years before she passed away and it was she who introduced it to me. She made it a few times but would also buy it at a local market that caters to latinos. I need to buy several cans of La Lechera brand sweetened condensed milk now because if I'm gonna make it, I'm doing more than one can. I have heard of the cans exploding if you don't keep them covered with water. A tip I've learned is to boil water separately before adding to the pot with the cans so you maintain simmering temperature.

    It's been a while since your post, but I just discovered this channel a few days ago. If you can't find La Lechera, just use Eagle Brand. That's the one I use all the time. Oh, and I'm born & raised in Argentina ;-)

    Chocotorta is an argentinian cake you must try: Equal parts of dulce de leche and cream cheese mixed chocolate cookies (without cream) Chocolate ganache you soak the cookies in milk or in black coffee and you lay them on your tray. Then spread the mixture over the layer you just made and repeat 3 to 4 times. Then cover with chocolate ganache. Its suculent and very delicious, HACELO.

    If you add a bit of cornstarch (dissolved in water/milk) to the mix you get “dulce de leche repostero” which is firmer and perfect to fill cakes 😉

    Also required for making _alfajores,_ the crispy sandwich cookie. You can't use the looser stuff because it just melts right out of the sandwich!

    Sounds heavenly. Anything wtih a flour in, including cornstarch, needs to come too the boil at some point to thicken fully and stop it tasting floury. I guess you could do that either when you combine it wtih milk our after its added.

    I LOVE dulce de leche, fell in love with it during my mission trip to Argentina many years ago. I recently introduced my kids to it and the youngest asks for it often. I recently made dulce de leche ice cream.

    Aww, that's really nice to hear! try making chocotorta, is a cake made of chocolate cookies soaked in coffe or chocolate milk, you do one layer of those and then add a mix of cream cheese and dulce de leche, another layer of cookies and then more mix, and so on. After that, you put it in the refrigerator for a few hours and it's done! I'm sure you and your kids will love it! Also, if you need more details search 'chocotorta recipie' on Google! :))

    Omg... add little pieces(very little but no powder) of chocolate to the mixture.. OMG here in Argentina you can buy it in the stores... the flavor is called "dulce de leche granizado"

    Hi John, there's a third method using an electric pressure cooker or instant pot (this is how I make dulce de leche). Place the trivet at the bottom of the pressure cooker liner. Remove the label from the can of condensed milk and sit it on the trivet. Add enough water to cover the can. Place the valve on the lid, close the lid and set to cook on high for 20 minutes. Allow pressure to release naturally. Once pressure has released, remove can from pot and allow to cool completely.

    Great video. As an Argentinian living in Japan, the best alternative I've achieved, after iterating quite a bit, is using a pressure cooker (which I bought exclusively for this). The first step is pre-heating the can(s) of condensed milk for around 10 minutes in hot water, this is important to make it more homogeneous, otherwise the inner parts will be less cooked. After that, close the lid (making sure the water level is appropriate) and boil at max pressure for 30-40 minutes. Make sure you *let the can cool down* in cold water before opening - you don't want a dulce de leche burn. This yields a quite uniform, thick and relatively strong dulce de leche. It's not quite as strong as Argentinean dulce de leche, in fact it´s closer to the Brazilian version, but still definitely worth trying. Gotta say though, I'm really interested in trying that baked dulce de leche.

    John! in argentina we eat dulce de leche with toasts, in cakes, crepes, pancakes, anything really! brownies with a layer of dulce de leche and cream on top is a delicious dessert.

    YOU SHOULD READ THIS! A TIP FROM BRAZIL! Here we put the condensed milk into a pressure cooker with the same amount of water you said, just enough to cover the can but not to fill the pressure cooker, it takes about 30 to 45 minutes, then the "Doce de Leite", as we call it in Brazil, is ready. Give it a try, it's madness boiling for 3 hours honey! Love your work.

    Some extra advice if you're going to boil in the can, do 3 or 4 at once, saving time & energy (3 hours is a lot of boiling). Just decant after & freeze.

    @@tammiemartinez6485 I think you don't even need to freeze it if you don't open the can, it's still sealed and with a pretty high sugar content, it'll probably last a while... its never gone bad in my house, but maybe that's because we're savages and eat dulce de leche by the spoonful (especially around christmas with a little cream cheese mmm)

    Hola John, Argentinian here, grew up never worrying about Dulce De Leche not being available at a store or at home. it truly is a staple and a must-have at every Argentinian household; it's almost as, if not more popular than peanut butter here in the US. My mom and my grandma used to make it, not because we couldn't find it at a store, but for the simple appreciation we all have in Argentina for homemade stuff. Three things that will completely improve the taste and color of dulce de leche: Baking soda, Corn starch and Heavy Cream. -Baking soda will give it a beautiful dark caramel color. -Corn Starch will thicken it, and give it the consistence needed for pastries (yes, dulce de leche is commonly used in many pastries and cakes) This type of Dulce de Leche is known as Dulce De Leche Repostero. My favorite birthday cake was the one my grandma would make with just dulce de leche and finely shredded coconut. -And last but not least, Heavy Cream will give it a more delicious buttery flavor, milk in argentina is thicker than here in the US, since they don't add as much water for mass production purposes as there do here. So, to any milk you buy here to make Dulce De Leche, I recommend using also Heavy Cream to compliment it. Your Dulce de Leche looks really good, now it made me want to go make some.     I used the boiling method and it turned out amazing!! 3.5 hours, topping the water off every 30 min or so. Turned out dark and silky as promised. Thanks, John!!

    For years now I’ve been making Dulce De Leche out of Sweetened Condensed milk in the can and just calling it caramel. I use it as an ice cream topping and as a caramel drizzle for pies and other deserts. So delicious

    John, you can do it in the pressure cooker, it doesn't take long, and it tastes very good. Place a can of condensed milk in the pressure cooker Then cover it with water, allowing half an inch to pass Cover the pan and cook over low heat until the pressure is reached After start to get pressure, count 30 minutes Turn it off and let the pressure go out by itself Then open the pan and wait for it to cool Take it off the water and open the can (wait until the can has cooled completely) Your dulce de leche is ready :)

    Really??? Will the can not burst or Anything??? I am worried about that. Here in India we use pressure cookers for many things. So is it okay to use it without any issues.     Sophia Davies, those are copper pots and pans. Many chefs prefer copper cookware as it heats up quickly and looks great. John’s pots and pans are beautiful and highly polished.

    I think making this is going to be perfect for fall/winter season! I love recipes that use the oven in winter! During summer months I put police tape and barricades around my kitchen!

    One of the origin stories of dulce de leche (the Argentinian version) is that in the 1800's in Cañuelas, two important historical figures (General Lavalle y General Juan Manuel de Rosas) were in a meeting and the maid forgot the "lechada", which is a mixture of milk and sugar, on the stove. And instead of burning it became this.

    This is basically known as “Caramel Treat” in South Africa 🇿🇦 It’s SO yummy. We’ve tried the boiling method numerous times but can be a bit risky 😅 so I’ll definitely be trying the first method. We usually use it as filling for chocolate cake, pancakes, peppermint crisp tart.

    Hi, lol I live in South Africa too (johannesburg) and I’m also from South America (Uruguay) and honestly the caramel treat here is so disgusting. It’s flavour is just... oh my god it’s not comparable to real dulce de leche. Even the condensed milk can version is 10 times better that that caramel treat stuff. I’ve tried it so many times wanting it to be good (I would love the convenience of it I swear I’m not being a snob) and it’s just weird dude, try them side by side and you’ll see the difference. It’s drastic. I’ve been having literal spoonfuls of traditional dulce de leche for my entire life and caramel treat is just a horrible experience for me lol. My mother in law loves caramel treat and I’ll never know why but she’s South African too. I just want you guys to be able to have what I have I want you guys to know how good it can really be 😩. Anyway- tldr version, caramel treat makes me shiver and traditions dulce de leche is such a pain to make that I could never convince someone here to make it.

    Hi John :) So I'll share some thoughts with you. I usually use the stove method you used for making Dulce De Leche and I cook more than one can of Condensed Milk together. It saves time, water, gas, effort etc.. I use a big pot of course. I keep them sealed as I find they store better this way, and I just open the can whenever I have a recipe to prepare. My favorite Recipe for Dulce De Leche is actually a Dulce De Leche Cheesecake! It's such an amazing combination and it's everyone's favorite here in my household :) Please do experiment with it and share your experience with us :) Always a pleasure to watch you :) Serena

    I use to boil 4 condensed milk cans in my stovetop pressure cooker, for 45 min. (They will last for a long time in the pantry.) Warning!!! Let them cold before open!!! First the pressure cooker, and then, the cans too. Dulce de leche (manjar in Chile) is SO good. A quick way to enjoy it: Use 1tbsp and spread it on a crepe. Then roll it up and... it's so yummy!

    Dolce de leche reminds me of one of my favourite dessert toppings from my childhood. I used to combine smooth peanut butter and condensed milk and pour it over ice cream, spread it on bread, or just simply eat it as is 😅. Other than the nutiness from the peanuts, the flavour profiles are similarly rich and creamy 😋

    @Nixon E deja desrespeitoso, el dulce de leche es común en latinoamérica, ¿ahora está prohibido comer? asi que deja de comer pizza porque estas imitando a los italianos, deja de comer hot dog porque estas imitando a los americanos, todos comemos alimentos derivados de otros paises, la leche dulce es conocida en toda latinoamerica, mexico, uruguay etc, que es esta revuelta con los brasileños? deja de comer croissant porque estás copiando al francés, cuando en otros países está prohibido comer un alimento me avisas.

    Genuine story. I was making this by boiling in the pot. It was a really hot day and I was just about to take a cold shower. So, I quickly lifted the lid of the pot to check that there was enough water in the pot before I jumped into the shower. Well, there wasn't much water left and as I reached for the jug of water, the can exploded along the seam and I was covered in steaming hot dulce le leche. Thank goodness the cold shower was running and I jumped into it and washed the goo off before I was too burnt. Fortunately no permanent scars, but I had a lot of cleaning up to do because the dulce le leche covered the walls and ceiling and some even made its way down the passage of my apartment. I just buy it at the supermarket now. 😀

    Yes, I kind of wondered at his making faces about accidents with the can, as if it's a silly concept. I've heard of it exploding quite a few times, and it really isn't funny. What terrible pain that must have been. Hot caramel is no joke. I don't even want to think about the cleanup.

    Or no chocolate. 2 cookies, dulce de leche in the middle and coconut on the edges (sticks to the dulce de leche) that’s how we do it in Uruguay. Then there’s the ones you buy in a plastic packet in the stores and it’s commercialized, those are the chocolate ones. Still good, but not traditional.

    My favorite method is : Put the cans in a pressure pan and cover with water. Let them cook with pressure for about 35 minutes, turn it off and let the pressure come out on it's own. And I totally agree that condensed milk should be more popular in the US, here in Brazil we use in almost all of our deserts 😂

    Olivia Cuba I've never heard of it ever happening, as long as you cover it with water it'll be fine. Some people say you should remove the label because it could clog the safety valves

    I make these all the time! I also make a coconut filling one. As soon as they come out of the oven I "glaze" them with simple syrup. As a native south Floridian, these are a morning staple!

    Believe or not, I had already received this recipe from a friend at church. She also told me how to do it boiling it in a pan. I did try it in my coffee, it took it to another level and I normally drink coffee without anything sweet. Awhile back I made a Trece Lech using your recipe and it went over great. A Perfect Recipe.     I’m Latina and my favorite flavor is dulce de leche is named cajeta too You can find it everywhere as a lollipop, ice cream, in bread, cookies and is so addictive

    Moved to Eastern Europe and discovered that condensed milk is a rarity in most village stores! Would you be able to do videos on how to make condensed milk & dulce de leche from scratch? BTW, you're just amazing to watch and your recipes are surprisingly easy to duplicate at home! Loving Preppy Kitchen.

    Making your own condensed milk is pretty simple: Put very simply, just heat up some milk, add some sugar (150g sugar for every 500g milk is typical, but it depends on your taste). Then simmer uncovered until it reduces roughly by half, starts to thicken, and turns a creamy color. The result won't be quite as good as the stuff you buy in stores, because they cook it in a vacuum pan at lower temperatures, which helps retain more milk flavor which gets cooked off at normal simmering temperatures.

    @@techmage89 Thanks so much. I have tried various recipes with varied results (none, as you say, are as good as store bought). And all take hours more than the recipe prescribed. Will keep testing.... Do you have any thoughts on some recipes calling for a pinch or two of baking soda?

    @@lumenesque1 Hmm, apparently some people do this to prevent curdling, but I can't say I've ever had this issue, I suppose it depends on the properties of your milk. I think best results can be achieved by heating at as low a temperature as possible, which is typically 60C (lowest safe cooking temperature to prevent bacterial growth). If it gets above 70C, some proteins in the milk will break down and permanently change the flavor, so you want to ensure it stays cooler than this.

    It's also especially easy to make in a crock pot! Take off the label, immerse the can (s), simmer away for a several hours!

    The can wont explode as long you keep it completely submerged in water. You need to keep an eye on it and top up water lost to evaporation.
