Here's an old technique to preserve dry food for long term storage.
In this video, I will walk you through the different steps to dry can flour, sugar, cereals and pancake mix. You can also can rice, beans or pasta the very same way. Pretty much anything that is dry.
Dry canning is a great way to preserve your food using Mason Jars.

Do not wet your lids for dry canning, do not put your lids on while jars are in the oven, you put them on after you take them out😳

Wish I would of seen your comment before doing this. Should of took she is learning And not copied. Nicely as I can say I messed up several boxes or pancake mix. There is moisture in the cans and they are burnt

Lo aprendi con mi marido. Este es solo para las materias secas. Hoy otras opciones con presión o bano de agua para las salsas y otras cosas con fluido. Un abrazo Ampy!

Can you accomplish the same thing by vacuum sealing the jars?

Yes and no. Flour for instance can have bugs in it. The heat should kill them. Not sure about the vacuum sealing...
Any idea the shelf life on dry canned flour? I’m told if you freeze it it’s good for 5 years. Thanks

I would not freeze it but keep it in a cool dark place instead. Like your pantry. And it should keep longer than 5 years. My husband has some jars that were canned 10 to 12 years ago that are still good!
Is dry canning better than vacuum sealing? Will the contents have a longer shelf life? Thanks

I did a video comparison between the two actually if you want to hear my thoughts. kzread.info/dash/bejne/daGivMabkqXaedY.html in my opinion, vacuum sealing is faster, but I think dry canning will last longer.
Is there any issue with putting the top on wet as ypu wipe dry the outer glass first, but lid is wet when you put it ion?

No it's ok. It goes into the oven for over an hour and any moisture evaporates.

Also do how long will these foods last? And do you think it would be better served including an oxygen absorber?

If canned properly, dry goods should last a good 10 years. I would not include an oxygen absorber here. But it is an other option to preserve by vacuum sealing it, using a vacuum sealer or an oxygen absorber. I did past videos on this. Here is an example kzread.info/dash/bejne/jJp83JaflsvJdLQ.html

Water for dry storage?? Then wet towel?? These jars are not really deigned for oven use are they?? I heard that's a big no no....

Any water left on the jar will evaporate in the over. And the jars hold the heat pretty good. Never had issues.
You cannot dry can pancake mix which contains fat.(any mix that contains fat) This is not a dry product. You also cannot use oxygen obsorbers in any food which contains fats or oils.

Do not put wet lids on dry canning jars!!!
