Dr. Zoë Harcombe - 'What about fiber?'

Zoë Harcombe was the first pupil from her school to graduate from Cambridge University. While studying maths and economics at this historic institution, Zoë set out to answer the million dollar question - "Why do you overeat? When all you want is to be slim?" This became the title of Zoë's first book - published in 2004.
"Stop Counting Calories & Start Losing Weight" followed in 2008, with an accompanying recipe book and "The Obesity Epidemic: What caused it? How can we stop it?" which was published in October 2010. "The Harcombe Diet for Men" (2011) gave men the super quick read they were after and then two more books were published in 2013 - a collaboration with Hodder & Stoughton: "The 3-Step Plan" and a completely revised "Why do you overeat?"
Zoë has a PhD in public health nutrition. She struggles to find anything that is being taught in 'conventional' nutritional worlds that is true or evidence based. Hence why she spent 2008-10 writing The Obesity Epidemic - 135,000 words blowing apart: the misapplication of thermodynamics to dieting; the notion that 1lb = 3,500 calories, let alone that a deficit of 3,500 calories will lead to a weight loss of 1lb; the Seven Countries Study and the subsequent change in our diet advice, which has caused the obesity epidemic; the role of exercise in obesity and much more.

    I've been a vegetarian for 12 years. I hadn't been able to lose weight to a significant amount since then. I would get crazy chronic pain all over my body. I would constantly get constipated. if I didn't eat the fiber (vegetarians and vegans suggested) to get rid of all of the plant matter and Grains I would eat, I would get so bloated. I'm happy to say that I mainly eat Meat, and Dairy foods. I no longer need fiber to be regular. I am no longer bloated. I no longer feel fatigue if I fast for more than 6 hours. I can actually fast for over 16 hours with no problem. My chronic pain in my joints, skin, and rectum have disappeared, and I've reversed my diabetes. I am also losing 5 lbs a week. My food intake consists of eating four eggs, three slices of bacon, two slices of ham, all cooked in lard or butter, then one cup of whole milk in the morning. For dinner I eat a large steak (or fish fillet, or roasted chicken), with some keto friendly vegetables, and a large pitcher of cold unsweetened tea. I have never felt better, and I will never go back to being a vegetarian. All I would ever be told was that meat was the cause of all of my illnesses, but clearly to me this was a load of bullshit. hopefully more people snap out of it. I'm glad I did.

    Good for you! Glad you were able to listen to your bodys ques and quit veganism. I was never vegan but for the past 6 years I've been eating little to no mean and mostly carbs and vegetables and sugar. I thought meat was the enemy just like so many people. Happy your on a road to recovery!

    @Black Sperm Wrong. On a keto diet LDL (bad) cholesterol goes down and HDL (good) cholesterol goes up. Those are facts.

    I will never forget the day my sister-in-law (a staunch vegan) stood in front of me with her "multi-grain" bagel made with highly processed and fortified flour, spreading her soybean oil based margarine all over it telling me how unhealthy meat and butter was for me. This from a woman who suffers chronic pain, fibromyalgia, anemia, and generally just a real pill of a person to deal with. All of these "healthy" vegan products in her kitchen that all came from factories and so highly processed as to try an mimic the taste and texture of real food. To make matters worse she is an opiate addict (oxy) to help manage her chronic pain. She is so completely ensconced in the cult that there is no way to deprogram her from all the brainwashing she has had over the course of her life.

    You don't need to eat grains to be vegan . I don't . You can't seriously tell me hand on heart that meat is more beneficial to health than the most nutritionally dense foods per calorie which are in fact plant based like seaweed.     It's important to realise that this woman either does not know what she is talking about or misrepresents the truth to support her stance. Glucose is indeed essential. While the body can utilize both glucose and ketones for energy, there are certain bodily functions that exclusively rely on glucose for fuel. These functions include: Brain function: The brain is a highly demanding organ that requires a constant supply of energy to support its complex activities. Glucose is the preferred fuel source for the brain, accounting for approximately 60% of its energy needs. Ketones can also be utilized by the brain, but they are less efficient than glucose and cannot fully replace it. Red blood cells: Red blood cells lack mitochondria, the organelles responsible for cellular respiration, which means they cannot directly utilize ketones for energy. Instead, they rely solely on glucose for fuel through a process called glycolysis.

    ​@@richardjackson5380 Gluconeogenesis provides all the glucose your body needs even if you are an athlete. That's why we have the ability to synthesise glucose from protein. The brain can even synthesise fructose when required. This is why carbohydrates are not considered essential.

    I've just watched a video by someone who knows their subject inside out but most probably practised it many times on her family before taking to the lectern, because repetition is the mother of all skill. I recall when I was a soldier having to often sit through lectures that could send you off to sleep rapidly and like some skilled people that performed those lectures Zoe has grasped that a little humour goes a long way in keeping the audience attention hanging on to every word. Perfect presentation in my book, and I learned a lot!

    Great talk! I keep telling people that once your body gets adjusted to eating for nourishment instead of eating for emotional needs you'll start eating once a day (or less) and food costs plummet. Before I started carnivore I was eating and drinking $35/day and after 40 days it was under $15 - and I eat 1.5lbs of good quality ribeye steak (not completely organic and grass fed but good quality beef) 5 times a week.

    I can't afford daily ribeye, but do have it once a week or sometimes twice. My staple now is 20% ground beef, which is cheap and high quality (made from ground chuck). With some eggs and butter thrown in, it works out a about £2.50 a day... I've cut out all the other junk and processed stuff and only drink water (and some coffee/tea)..... that's an exceedingly affordable diet!

    Correlation is NOT causation. There can always be a third factor. Causation can also be the REVERSE of what you assume. For example, people who eat a lot of fiber tend to be careful dieters and probably do NOT eat much candy, soda, or processed food. That is probably the real cause of their improved health. Better health means more energy to exercise rather than the opposite.

    I tried the whole high fiber thing. I tried every combination. Insoluble and soluble. Different kinds of fruits and veg but i kept feeling miserable and fatigued and bloated and constipated. I just gave up after a few years and drastically reduced my fiber intake. Never felt better. The fact that we need fiber is a myth. I don't think our bodies were made to process a lot of fiber.

    Fibre is essential. Our ancestors ate and used lots of it when their digestive systems were larger, more complex and able to get turn it in to fat. Then, despite not changing our diets and still being a mainly vegetarian species, we lost (almost all) the ability to utilize fibre for energy, became the only animal on the planet to get the majority of our energy from carbohydrates ( speaking from a perspective of what ends up in the blood stream ) but still had a need to fill our colons with 50-100g ( or more according to some authors ) of fibre a day to stay healthy. This all sounds entirely plausible...

    Having been on LCHF, moving into keto occasionally, for a little over 2 years now, I recently came to a realisation that since starting, the "number 2" has become consistently easy, neither hard nor soft, apart from occasionally when I let myself dehydrate (long hike, not bothering to drink much). One surprising consequence is "clean output", dramatically reducing use of toilet paper. Right at the beginning I was scared by the floating faeces phenomenon, but I guess it's just normal for LCHF, and I assume is a sign of fat content. As per LCHF, I eat a moderate amount of non-starchy veg with my (moderate amount of ) meat/fish/egg/ with generous butter or olive oil on the veg. Desserts are full fat fromage frais (to which I add heavy cream, which I discovered is a good way of making it more palatable without adding sweetener) and cheese. So not zero fibre, but certainly not high fibre either.

    Yeah, my problem is I can't have any dairy, and can't afford fresh coconuts and dislike having Coconut milk much otherwise. Thus, no sweet cream :( :( !!

    on a LCHF diet my focus is on potassium, salt and magnesium. I stopped supplementing with fiber and feel a whole lot better.

    I really got conned with the high fibre myth! I spent my late teens and all my twenties eating wholemeal bread, bran flakes, bran biscuits, lots of fruit and veg, wholegrain rice, skin on potatoes etc. Low meat, and lots of vegetarian meals. All for extra fibre. I was also prescribed Fibre Gel on a permanent basis. Yet I was severely constipated, to the point of extreme pain, and even being taken into hospital. Today I eat white rice, more meat, white bread, white pasta (not saying they are good for you. I am not well - planning to go carnivore), less fruit and veg. And I have virtually no trouble going to the loo at all. As you get older, you realise how many things we are taught, are a complete con! Xx 😘❤️😘❤️😘❤️😘

    Soluble fiber nourishes healthy bacteria in the gut, the microbiome. . The gut is called our second brain for many reasons. Healthy fiber from fruits and vegetables.

    Eating lots of fiber for 10 years made me severely malnurished: advanced osteoporosis, super advanced osteoarthritis and recently SIBO! After healing my SIBO, my stomach became flat and my energy went up like crazy. Unbelievable... I was so mislead... this is good info.

    Just loved Zoe's presentation ... informative and humorous ... I have been pondering this fiber issue and wondering if I need to eat as many vegetables ... Grains and me are no longer in a relationship these past 8 months ... and I am experiencing tangible benefits ... We have so many "nutritious LCHF" youtubes to munch on ... and not gain a pound/kilo, but instead a lot of improved health benefits! Thank you!

    Went high fiber, over 80 grams a day for about a month. Despite being in a 500 calorie deficit, was gaining weight. Stomach always in knots, and wicked farts.

    Either you overestimated your caloric expenditure, or you underestimated your caloric intake. One can't gain weight in a caloric deficit.

    We need to question everything and be able to go through any cognitive dissonance when long-held beliefs are challenged. Fiber being good for you isn't so hard to accept as a lie. Vegetables being good for you is a much bigger lie to overcome, but do the research. A Carnivore or Ketovore diet is probably the healthiest for most humans. Another lie: cardio exercise is good for you. Sure, for short bursts. But running/jogging or being on a treadmill regularly for a half hour or more is bad for your body and health, and you won't lose weight. Check into HIIT (high intensity interval training) and strength / resistance training. They're the best. Here's a smile for you: "I practice resistance training.     Exactly. There are gut microbes that only exist in our lower gut by feeding off the fiber you eat. The more gut microbes you have the healthier you are. Not to mention the massive diversity of micro nutrients that are in fruit & vegetables that you can't find in animal products alone. She also ignored the studies proving how eating fruit & vegetables (natural fiber) helps to prevent bowel cancer. I'm all for the a low carb/keto keto diet, but excluding the health benefits of natural fiber is just crazy.

    Gut biome shifts as the diet. You’ll decrease fermentation microbes by card removal & decrease gut inflammation. If only you had a cecum & not an appendix. 😂

    Oh, and by the way, l should mention that the only way we can consume animal products with peace in our hearts is if we are able to master a few traits. Three that immediately spring to mind are: Selective compassion. An ability to disconnect from reality. An unwillingness to confront inconvenient truths. WOW! Pretty undesirable traits to have in a society.

    Do you realise how many animals are killed to protect plant crops for human consumption? And by horribly cruel methods? Billions annually. One wheat farm in Australia will poison 11-20 million mice per year. That's one target species on one farm. And the poison can take up to 12 days to kill them. Then there are the birds and rabbits and wild hogs shot from a distance (so rarely a humane kill shot). Where is the humanity in that? Where is the compassion? They are treated as collateral damage and chucked in the bin. In contrast I live on half a cow per year that I raise myself and which is butchered on farm (a well placed bullet through the head and they literally drop dead, no 12 days of suffering) and milk from my own house cows.

    In Germany, we call fiber Ballaststoffe which literally means ballast substances. Despite this very honest name, they are still being recommended to people.

    I ate “plant based” for 1.5 years and got worse and worse bloating and gas over that time. I went mostly animal based for now a month, the bloating got so so much better. I try adding in a few fruits (berries) and veggies here and there, but it kind of doesn’t even seem necessary. Often I get gassy when I try it with the exception of zucchini and plain lettuce and for some reason tomatoes are fine, too. The only other plant stuff I still eat regularly is dark chocolate (95%) and peanut butter.

    ^^Sources? My anecdotal evidence shows she's absolutely correct. I was semi-constipated for 15 years eating a so-called "healthy" diet and 30-50g of fibre a day. Went keto, paid no attention whatsoever to fibre and I've never had such soft and easy bowel movements in a couple of decades.

    I heartily agree with the low carb approach . I was born into a working class family in the 1950's and although we had a lot of home cooking , there was also a lot of bread , potatoes , jam , sweet tea , and margarine in there . Chocolate and cake only once a week and at Christmas and Easter .So my health was pretty compromised early on

    I can appreciate that upbringing, though without too much sugar. Throw in 2 smoking parents -- the 70's and early 80's were a bit of a nightmare though. Fast forward to today, I'm 60, very happy to say healthy in the truest sense (and backed up by the blood work results). Yes, our early years may indeed have compromised certain aspects of our health though I remain confidence that our bodies can REVERSE damage as well as prevent further damage.

    This talk is excellent. As an FYI. It's not 'eduation' only that is the different for box D. Trauma is a big issue. If you are living with a primed nervous system you wish to placate it with foods that make you feel safe and like there is abundance and you may eat in line with emotions more too. So trauma really needs to be factored into health conversations are a key aspect in why people make the choices they do evn when they have money and knowledge - if you don't believe you're worth making the effort for then you won't make the effort to cook healthy food from scratch.

    Well, even without low self esteem, traumma can definitely still be a factor in the ways you mentioned. I can see that in myself, needing to feel safe and happy, feel pleasure that's more un-strived for than counting my blessings and appreciating, being thankful. That's cheerful, even joyful, but not the same as happy, pleasure endorphins or whatever. My not all bad but also chronically traumatic childhood lasted to my late 20s and followed me beyond, so, I know.

    I’ve been a type 1 diabetic for 50 years. I spent over a decade eating a low-fat, high-fiber diet. Constant high blood sugar. Mostly I just didn’t bother to check my blood sugar, though: I was eating supposedly healthy foods! Big mistake.

    So, just starting this video, I feel that she has an appeal to the appearance of authority because she looks like a member of Star-fleet. I actually found myself looking for her rank insignia! Great Presentation! Very informative and Entertaining as well! I found when my diet was mostly animal foods and fats, , vegetable leaves and stems, some seeds/nuts, and only occasional starches, I had very easy BM's and No time to read anything while in the bathroom. Most of my fiber came from nuts, leafy vegetables, and stem veggies like celery, bak choi, broccoli, cauliflower, etc. . When I couldn't cook for myself for a while and was fed a more standard American Diet, it was like passing bricks!

    Fun fact about what the microbiome needs... Gut bacteria use a small amount of fiber to make short chain fatty acids (butyrate) for fuel. When you're in ketosis you are making plenty of butyrate for both you and your gut bacteria.
