This week on Basics we're taking a look at donuts. We're whipping up a mess of jelly and cream filled donuts and also taking a look at the lesser-known sour cream donut.

Shopping List
+ For the yeast donuts:
1 cup whole milk
1 tsp granulated sugar (for the yeast)
1 packet active dry yeast
350g all purpose flour
75g white sugar
1 tsp table salt
3 large egg yolks
Additional flour for work surface
Vegetable oil
Additional sugar (optional for coating)
+ For cream filling:
3 large egg yolks
1 whole egg
85g white sugar
30g corn starch
Dab of vanilla paste
2 cups whole milk
+ For the chocolate glaze:
4 ounces chopped chocolate
1/4 cup whole milk
Dash of instant espresso powder
2 Tbsp corn syrup
+ For jelly filling:
Seedless jam of choice (I used raspberry)
+ For the sour cream donuts:
600g cake flour
1.5 Tbsp baking powder
2 tsp table salt
5 egg yolks
250g white sugar
2.5 Tbsp unsalted butter
380g sour cream
Additional flour for work surface
Vegetable oil for frying
+ For classic donut glaze:
400g powdered sugar
2 tsp light corn syup
1/4 cup boiling water
Special Equipment & Tools
Instant read thermometer
Biscuit cutter
Cast iron skillet or other vessel for frying
Paring knife
Piping bag to insert filling
Donut cutter

    I made these today with Babish's recipe and I have one note. I've noticed that the bulk ferment is what makes the "airy-ness" of the donut crumb, and the second proof after being cut is more about getting the final "height" of the donut. That being said, my 1-hour bulk proofed donuts were pretty dense, but the 3-hour proofed batch was far more airy and fleshy on the inside without retaining oil in the top.

    Just FYI the recipe on the website says a cup of milk in the ingredients but i'm pretty sure you don't use a whole cup of milk This meant i totally ruined my first batch, though you should know so i can save others from my fate

    Finally made these today (the jelly-filled: my favorite). I failed 7 months ago so it felt really nice to finally have a success!     Havent had donuts in years because of fructose intolerance. You have inspired me to make some myself, and I replaced sugar with Xylitol, worked great and they are delicious.

    Made a bunch of the sour cream donuts recently and they were great! Made the classic glaze, a maple glaze, and coated a bunch with cinnamon and sugar. Didn't have a smaller cookie cutter for the hole so I used a beer bottle and it actually worked really well. Also didn't pay enough attention to the video so I made a double batch which made an insane amount of donuts.

    Personally I prefer to fill the doughnuts with cream after the chocolate has solidified, or the warm chocolate usually melts the cream :) Works with eclairs and profiteroles too!

    I’ve still never found a doughnut I like as much as a FRESH HOT KRISPY KREME original glazed. They almost melt in your mouth the dough is so delicate. I love the light crispness on the exterior (some from the dough, some from the glaze) that gives way to the cloud-like interior.

    When I made these donuts, the dough came out unbelievably sticky. The amount of flour I added ended up making bland, too-chewy donuts. I saw in your livestream you fridged leftover dough as an experiment, and I would like to know if that would be a viable solution to sticky dough. Also, we're more of a fan of fluffy vanilla creme rather than custard. Any recommendations? I was thinking of a combination of vanilla, powdered sugar, and vanilla, whipped and carefully piped.

    They look so very tasty! In Germany we know them as Berliner, Krapfen or Pfannkuchen, mainly in the Raspberry configuration ^^ Your donut cutter has two little holes on the top, I bet you could push them out that way with a scewer or something. Just to be THAT guy I would like to make a case for the damp kitchen towel instead of plastic wrap as a cover for proofing dough! And what is so bad about that skin, can't you just remove it after the fact? ^^ Four sheets of plastic wrap could have been saved... yes I know its annoying to hear, but that doesn't make it less true and imagine everyone doing it, that adds up super fast.

    So glad I can know make my own sour cream, or as I've known them old fashioned, donuts. Just had one today and if it didn't hit the spot! Didn't have coffee with it because I didn't know my classmate was bringing them, but I digress. I'll be sure to share results once I make them, especially since I do plan to go half classic, half one of my preferred styles, maple.
