Used to walk the garden with my grandaddy in the late 60s. We'd pick a stalk of rhubarb and chew it for the sweetness. Grandma would make awesome rhubarb pies. Yum.

She says a lot of things you can use the leaves for but doesn't explain how to do any of them. The main one she shows in the video was making a bug repellant to spray on plants: steep rhubarb leaves in hot water (maybe boil them for a while?) and then put the remaining liquid in a spray bottle. Other things she mentioned were making a slug trap, shine pots and pans, and making a natural dye. You can also safely compost them.

The oxalic acids are not the worst part. There is an unidentified toxin in the leaves that can cause rhubarb poisoning which causes sickness and can potentially be fatal. Though poisoning isn't common it's still a very real possibility. Women and children especially unborn children are the most susceptible. I just learned a bit on it yesterday interestingly enough.

Poke salad isn't made with rhubarb. It's made with pokeweed, a generally non cultivated plant that ranges from ever so slightly poisonous to do not eat under any circumstances depending on the time of year/age of the plant. If they were harvesting them when they looked like rhubarb (ie the stems were red/purple) that's generally considered too late to be safe but hey if everyone was ok after eating I guess it was alright. But just know what you're doing if you make it. It's delicious when done right but you have to be careful.

The part of rhubarb that we've all been eating is the stem, not the leaves. The reason you can only find the stems in most stores is because people were unaware of the dangers of eating the leaves and ended up poisoning themselves and their families so now the leaves are removed before they are sold and most people don't even know that there is a leaf that grows on the end of the stem. The only reason I know this is cause my family had to start growing it because I loved it so much as a young child and we couldn't afford to buy enough of it to keep me happy 😅 my family now calls me rhubarb as a nickname

@@thecottagepeachmy aunt took her recipe to the grave. So if you play with making, suggest using champagne yeast at the begaining. And don't toss out earily attempts. I had a run that was a horrible new wine. Just resting in bottle for a while (like 2 years) it turned into something sorta nice. The champagne yeasted rice wine, which tasted like boiled lemonade as new turned out really nice. Me and mine had gotten snowed in and no one was going much of anywhere so my hoard of "mistakes" ended up being the Holiday booze. There are a number of competent brewing and vintner books. An amazing number of hardwear stores carry supplies for beer and wine making. Fyi, you can attract cats with brewing certain beers. This can be an addictive practice. I mean, oxalic acid isnt great for you, but there are other foods that have hust as nuch, ir more. Id imagine its more of a dosage problem. You dont eat a ton of chives all at once, but with those big green leaves, you could get a large dose eating just one. If you exchanged one for one, i believe the rhubarb has less.

Spinach actually contains more oxalic acid than rhubarb leaves. There was an interesting national geographic article talking about how it was only after the government encouraged people to eat rhubarb leaves as an option for greens in wartime that a man died after eating a (not literal) ton of it. . . Not that I’m about to start eating it, lol. Interesting though!
