    Hello . Do you use T65 flour for this recipe because I tried it with T45 and my dough was very sticky. a question if I may. Why do you use T65 flour which is normally used for bread and baguettes? At what temperature do you make the dough rise because after an hour my dough was half that of yours. I thank you for answering me.

    INGREDIENTES  180ml agua tibia  30 g azúcar  1 huevo  4 g levadura seca  340 g harina cernida  30 g mantequilla blanda  2 g sal  1 yema  1 cda. leche PREPARACIÓN 1. Mezclar agua- azúcar-huevo y levadura 2. Agregar harina y mezclar con espátula hasta tener todo bien incorporado. 3. Agregar mantequilla y sal. Mezclar con las manos hasta tener una masa tierna. 4. Trabajar sobre superficie enharinada hasta tener masa blanda y que no se pegue. Poner una gota de aceite. 5. Vaciar en bowl con aceite (poquito) y dejar leudar hasta doblar el volumen. 6. Estirar y luego formar un cilindro. Corta en mitad y en mitad hasta tener 1|2 bolitas. 7. Poner sobre bandeja y dejar leudar. Tapado con plástico por 10 minutos. 8. Estirar cada bolita hasta formar un cilindro delgado . Se tendrán doce cilindros de 40 cm c/u. 9. Trenzar y dejar sobre papel mantequilla cubierto por plástico por 30 minutos. 10. Pintar con yema y leche, poner almendras laminadas. 11. Hornear a 180 grados por 20-25 minutos.
