With its origins of Rochester, New York, The Garbage Plate is an icon. Legend has it that this gut buster was born in 1918 at Nick Tahou's Hots, and became popular during the Great Depression as a filling, inexpensive meal. Why 'garbage' you say? Well, it's a pile of food built of home fries, macaroni salad, cheeseburger patties, meat sauce, chopped onions, mustard, and ketchup. 😲

    Absolutely. I've noticed it a lot in the prison recipes they have. No judgment, no dehumanisation, just a statement of facts about the recipes and the access and tools of the people who created them.

    As a Rochester local, let me tell you a few things about the Garbage Plate. First, the ingredients list is totally flexible, other than you've gotta have a meat, a potato product, and meat sauce. It's more of a concept than anything. Second, the meat sauce. Supposedly, it was created when Nick, the namesake and Alex's (the founder) son, got curious in the kitchen. He took some of his dad's hot sauce, scraped the meat off of the grill from the burgers that had been made that day, and mixed it together. He loved it, and over time the recipe was refined and spread through the GRA. Third, the origin of the name. The setting, of course, is Nick Tahou's, decades ago. A guy walks in who's known for being particularly picky. Legend has it, the chef at that particular time was Alex Tahou himself, the founder. He'd had a hard day, and this guy was the last thing he wanted to deal with. He orders a burger with ketchup, mustard, onions, hot sauce, home fries, and mac salad. Alex has already had enough for the day, so he throws it all together in a mish-mash. On top of that, he throws in some Italian bread rather than a burger roll. He serves it. The guy asks him what the hell it is, and tells him it's garbage on a plate. The picky fellow gets angry, and decides to eat it out of spite... And loves it. He comes in a while later and actually orders "that garbage on a plate." Alex whips it up, and the Garbage Plate was born. Finally, the way it's eaten. The best way to eat it is mix it all up in a take-out box, and take a forkful of all of it at once. Also, if you're not able to drink up the meat sauce once you've finished the rest of the food, you didn't have enough on it.

    Emmy, here in Vietnam there is a hard time food called "cơm độn" (mixed rice), that made of rice and sweet potato/any tuber type starch you can find around. Usually I make it now by taking half the rice I need, dice one potato, one sweet potato and cook in the rice cooker as normal. Then eat it with sesame and peanut salt mixture (pounded sesame+peanut mixture, add salt to taste. Delicious with boiled veggies too). Because Vietnamese entered 2 war with France and America (later is war with China), we had little to no rice to eat, only rich people can enjoy a meal with full white rice and side dishes. Poorer ones would mix tubers with rice, or straight up eat only boiled tubers or any wild vegetables they could possibly find. This happened around the 20th century, and only gets better at the 90s.     Garbage plates are also best at 2 o’clock in the morning after a night of drinking. Living in Rochester, every restaurant has their version of it, and my family loves them, but we don’t get them very often!

    Julie Chechi They aren’t remotely as cheap as they used to be. The cost of food has gone up so much - especially here in Southern California where inflation has affected everything to the most ridiculous degree ever. In addition - all the stuff used to fix potatoes in different ways is also a lot more expensive these days (oil, butter, sour cream, cheese, onions, garlic, seasonings like rosemary and such, condiments, etc). And it is only going to continue to get worse... These monsters in charge of our federal and state governments are intentionally making hell for our quality of life as citizens by continuing this openB0rder and massMigrati0n nonsense so they can keep getting richer and have all the cheap lab0r they want (and end the concept of separate countries to boot), while we get poorer from basic supply and demand principles, and thus can’t afford a tenth of the shit people could afford in the 50’s-90’s. And even if you qualify for food sta’mps, if you are wh’ite, you ain’t getting that aid, because all the government workers in the social safety net programs are His’panic or bIa’ck, due to affirm’ative acti0n, and they bIatantly deny wh’ites benefits they deserve, giving them to iIIegaIs with anch’or baby kids instead (giving them to people who never even paid a penny into the system, ffs).

    The cost of small Cambell’s soup alone here has doubled from 99¢ to $2.00 per can now in the last couple of years. That used to be such a cheap thing to eat - a can of soup. $2.00 for a lil can of soup now is ridiculous. I remember a can being around 50¢ - 69¢ when growing up, ffs.

    HellthyJunkFood just released a video where they tried garbage plates from all over Rochester. They actually rated Nick Tahou Hots as the worst garbage plate, even though it's the original. Their #1 was dogTown hots. Glad they did all that work for you. Eating so many garbage plates in one day sounds like a heartburn nightmare.

    I used to eat garbage plates years ago while living in Rochester, my ex used to get me those. They taste better when you have an hangover. I didn't like them at all. I live outside of the city of Rochester called Hamlin and I am not from Rochester originally.

    Lovely Lilax I am from Syracuse-Nedrow area originally, yes Hamlin is very beautiful and different from the city of Rochester. It's homey and very comfy. The lands are big and huge plus beautiful. Best decision ever!!!

    I went to college in Rochester. The garbage plate was definitely what you wanted at 2am after a night of drinking. The perfect drunk food.

    Honestly, though, it wasn't really a product of the scarcity in the time. It was just college students wanting that convenient plate with everything on it. Maybe the boys and potats was (though the myths in Rochester are all over the place on that), but the true garbage plate came from college students going "give me a plate with all that garbage on it" which was shortened to "garbage plate" 🤷‍♀️ She got the hot sauce totally wrong anyways

    This is great. I was pleasantly surprised to see a Garbage Plate on your channel! I've lived in Rochester for 25 years, and have had one Garbage Plate, and yes it was late at night and after the bars closed (honestly, that's when most transplants to Rochester have their first Garbage Plate. One thing about the hot meat sauce. Here, that kind of hot sauce is another staple, and it's put on several things, but it has more than cumin and chili powder. It usually has sweet spices too, like cinnamon, cloves, and allspice. It makes a difference I think. Glad you liked it!

    My grandson requested garbage plates for his high school graduation party. Although I grew up in Rochester I did not know what it was. It is the perfect way to feed a large active group of teen boys. You presented it very well, thank you.

    Lifetime Rochestarian here one of the reasons this got popular in Rochester was that Nicks was open 24/7 When the bars closed at 2 people went there. It was a great plate to eat after a night of drinking. I had a friend who would put a whole full bottle of ketchup on and clean the plate.

    I used to eat a lot of those garbage plates years ago and yes you right Rochester, NY is the home of garbage plates. My ex used to get me one of those when I lived in the city of Rochester. I live in the Rochester suburb of Hamlin now and I am not from Rochester originally. To be real with you, they taste better when you drunk bcuz you don't know what you tasting bcuz its all mixed up in one. I don't like them at all, can't stomach eating it no more. Lots of people including me in Rochester thinks it tastes better when you are intoxicated. Speaking from experience, have a great day!!!

    Daddy used to make a one-pot meal with ground beef, macaroni, tomato sauce, canned corn (drained), chopped onions, chili powder, & chopped green chiles. It looked GROSS to us kids the first time he made it. As he was walking out the door to go to his Lodge meeting, he told Mom, "Make 'em eat it!" That's what we've called it ever since. Turned out, we LIKED it!

    @@rydactyl if u can afford a thing of broccoli, cut the florets off, toss em into a blender, add A LOT of salt.... And dip the bread into the broccoli soup. Its fkn delicious & like $2 (Walmart or food City has both where I live). The blender makes the broccoli hot so no cooking required

    Reminds me of college years in western NY. An amazing dish for the end of a bar hop, though I can't say I have any super clear memories of it.

    I was raised in Northern NY and the garbage plate was something that we would have when stopping through Rochester. Has anyone tried glazier hot dogs? They are a thick-skinned hot dog from the north country in NY. They are great grilled or cooked over open flame, but to be honest I don't know much else about them. Has anyone else had them?
