I am not sure how to cure salami but I think the cabinet is too warm and too dry with too much airflow. It is of course possible to place it in a cooler area and increase the humidity but you will need to check that the conditions is right for salami.

Hi Ronald nice video,I am making a less fancy biltong box with a 80L Tupperware and I wanted to buy a 12v computer fan but it didn’t see powerful so I was thinking of buying a 120v bathroom extrator fan,I’m in a warm weather environment so the meat should dry pretty well I just need some advice regarding airflow if you can help?

Hi Hurley. I am definitely not an expert on biltong making. This cabinet seem to work well enough, especially in the winter as the air becomes very dry with all the heaters in the house. The temperature is also quite constant (around 22 degrees). An extractor fan should work but I just needed a small fan for a constant gentle air flow. I think a good place to get more information and ask questions is from the Reddit biltong community (www.reddit.com/r/Biltong/).

If ever you measure the relative humidity?

Were should be the hygrometer is place?

I would place it inside the cabinet - but not direcely in the airflow path.
