This Blueberry Lemon Cake is loaded with 1 pound of blueberries and every bite has sweet pops of juicy blueberry and fresh lemon flavor. It’s not too sweet and not too tangy, but just right. This is my favorite tea/ coffee lemon blueberry cake.

Ingredients for Blueberry Cake:
►2 large eggs
►1 cup (210 grams) granulated sugar
►1 cup sour cream
►1/2 cup light olive oil or vegetable oil
►1 tsp vanilla extract
►1/4 tsp salt

Okay guys, so I made this last night...whipped it up in a few minutes...and it is amazzing! I was a bit traumatized from the strawberry cake (came out raw in the middle most likely due to over mixing) but with this one I just kept it simple, followed step by step, and VOILA! Came out perfect. Thank you Natasha! Husband approved ✅
I'm definitely a novice baker and I only have a small NYC kitchen at my disposal, but this was one of the first cakes I've ever baked and it turned out amazing. Moist and not too sweet, with a heavenly combination - sweet blueberries and tart lemons. I made a lemon glaze for the top using just powdered sugar and lemon juice/zest to give it an extra umph, and it was AMAZING. This is by far one of the best things I have baked so far and I am thrilled. My roommates and friends love it!

I tried this recipe yesterday and there's only a slice left now!! 😂 clearly it was a hit and I added a personal touch to it, some crumble on top of the batter before baking it in the oven. This took the cake to another level 👍🏼💯💯

Saw this recipe and couldn't shake it off my mind so tried it immediately. It came out absolutely perfect. Soft fluffy and so tasty. I added Greek yogurt as I did not have sour cream and reduced all ingredients by half to make a smaller cake. Baking time was exactly 55mins as you said. It came out just as it's suppose to. Thank you so much for this recipe. So easy and so delicious 😊

Made it and its super delicious. Swipe sour cream with Greek yogurt. I used scale to measure as not used to cup measurements . 200gm sugar, 8oz greek yogurt, 4oz oil and 250gm flour. Cake turn out perfect. Thank you Natasha!

Made this last night and it came out so great! I was out of sour cream so I substituted it with a cup of full fat milk and a tablespoon of fresh lemon juice (mix before adding it will thicken a bit more like sour cream). I also used frozen blueberries and strawberries and it worked perfectly!

I just made this cake and I’m certain it’s the best cake ever I have made. It’s just absolutely delicious!! It’s easy too. Kefir is fermented milk drink similar to yogurt but thinner. You can find it at the supermarkets at the yogurt aisle.

Made this cake and this recipe is a keeper. I would add and additional 1/4 c of sugar to make it sweeter. And i like a strong lemon punch so i add more lemon juice and zest.

Natasha my friend, I gotta tell you this. Currently, we do not have an oven due to a kitchen renovation. But after viewing this video, I was inspired to figure out how to make this cake. I decided to try this using my Ninja Foodi Grill's 'Bake' function. OH MY GOODNESS...IT CAME OUT WONDERFULLY! Soft and moist crumb, with each bite bursting with blueberry deliciousness, coupled with the lemon tang. WOW! And I love the crispy edges where some of the blueberries were slightly charred. Hello Natasha. I made this cake last Thursday as it was the last clapping day for the National Health Service in England. I shared the cake with the neighbours and it was simply DELICIOUS! Everyone loved it! I made it in a rectangular mould as I found it easier to cut. Thank you very much! 😁👍

I like this nice and easy but pretty looking sweet and tangy cake.
This cake is delicious. I would recommend cooking at 350, though. It was slightly too brown. I had to trim it. I used a powdered sugar lemon glaze on top.😋
Is it OK if I replace the sour cream with yogurt??

@2Eternity Little known baking secret - you can use olive oil in any cake recipes. You don’t taste it after it’s baked 😉

Hi Veronica, if using frozen, thaw and drain off any excess liquid and toss the thawed blueberries in double the corn starch and do not add lemon juice to the frozen blueberries.

Best recipe ever! Last year made it with black berries. This year one with cherries and once with sour cherries. ❤️❤️❤️

Omg! This recipe is fantastic! It’s so moist and flavorful I’m in love with this cake! It’s not to sweet either which I ❤️. I wanted to make a special cake for my sister’s birthday and I wanted incorporate blueberries . I’m so glad I come across your recipe because it’s perfect. I made one to try before making a birthday cake. And let me tell you, I couldn’t ask for a better recipe! Thanks so much for sharing ! Also it pairs nicely with a 2018 Cecilia Beretta Valpolicella from traders joes! It’s so amazing together thanks!
