Delicious Tom Kha Gai Recipe - with Benja Chicken

Tom Kha Gai is a dish that brings me back to when I was living in Thailand. The creamy, sour and spicy soup never fails to get the salivary glands going!
For this recipe, I used Benja Chicken Breasts which have been lab proven to be 55% juicer than regular chicken and with a simple marinating technique the chicken is exquisitely tender and moist!

Here is my recipe:
INGREDIENTS:
- Benja Chicken Breast (500g) - bit.ly/LazBenjaChickenStore
- Salt (1 Tsp)
- White Pepper (1 Tsp)
- Egg White (1)
- Corn Flour (1 Tbsp)
- Water (500ml)
- Chicken Stock Cubes (1/2)
- Galangal Root (2 inch knob)
- Lemongrass (3 stems)
- Shallots (2 pieces)
- Coriander Leaves
- Kaffir Lime Leaves (8 pieces)
- Red Chilli (3 pieces)
- Yellow Onion (half bulb)
- Coconut Milk (500ml)
- Lime Juice (3 Tbsp)
- Fish Sauce (3 Tbsp)
- Palm Sugar (1 Tbsp)
- Shrimp Paste (1Tbsp)
METHOD
- Marinade the Chicken Breast with salt, pepper, egg white and corn starch.
- Bring the water to a boil and add chicken stock cube, and the rest of the fresh herbs.
- Simmer for 5 mins then add coconut milk, fish sauce, lime juice and palm sugar (or sugar)
- While the soup is gently simmering, add the chicken breast and poach until just cooked.
- As an added boost of flavour and colour, add a spoonful of Thai shrimp paste.
SERVING SUGGESTION:
- Serve with white Hom Mali Rice

    Good recipe! I myself don't use onions, but I've seen it done. The shallots would be especially nice. Tom kha gai is my favorite dish in the world. If I could only eat one food the rest of my life, it would be this. When I make a big pot to share with others, I make it without any peppers because I have my Thai pepper sauce and chili flakes for my serving, which I like fiery hot.

    Egg white is alkaline which actually tenderises the chicken if you leave it in it for long enough.

    Hi I prepared, very good. I use the thai chilli paste 2 t. Sp. And fish sauce. 2Teasp. Used thai coconut milk. Thank you. Will try again with prawns. From Dubai

    You can leave it out if you don't have it. A bit of Tom Yum is fine too.

    Chef, this is my fave soup. ?? Would it not be better to strain the lemongrass and galangal and kefir leaves and then add the mushrooms, milk ect? The lemongrass and galangal are very woody and tough to eat. Just a thought.

    Thanks for your tips! Translated: It is considered close to Tom Kha Kai. But it looks wrong in the recipe and it's not appetizing. 1. Tom Kha Gai with or without mushrooms. This is correct. 2. Boiled galangal with chicken. Use tamarind. not lemon juice It will have oiliness mixed in the soup. 4. Tom Kha Gai is a mild spicy curry. So must have red chilli and dried chili sprinkles
